(I have talked about that here.) On that post I gave you a recipe for Pumpkin Gingerbread French Toast with Lemon Sauce. It was so good and I have been thinking about other breads that would be over the top awesome as French Toast. I thought about Cinnamon Swirl Bread, and that sounded good but like it has been done. Then, I thought about Cheese Danish and how much I love it. (My husband once wrote me a poem about it when we were engaged, so it has always held a special place in my heart since then.) I thought to myself, "What if you make a Cinnamon Cheese Danish Swirl Bread and tun that into French Toast?" Whelp, that is what I did! I started with a recipe for sweet bread that makes only one loaf. One loaf is never enough, so I doubled it. I ended up with 4 loaves! Don't even ask me how that happened! I used my Kitchen Aid because I thought that this was going to be a small 2 loaf recipe. If I had known what was going to happen, I would have used my Bosch. But, here is an overview and how I did it and what I will do differently next time. Click the button for the recipe! You will note that in the recipe I tell you to put a lot of cinnamon in the filling. I tell you that because when the bread rises, the cinnamon spreads out. I wish that I had put more in this batch. So, just a word to the wise. Now, next we will make the French Toast! When I make French Toast batter, it goes like this: 2 eggs, about 1/4 c. milk, 1 tsp of vanilla, 2 T. sugar, a dash of salt and cinnamon if desired. (I desired cinnamon.) Whisk it all together in a wide shallow bowl, then, dip in your bread slices and cook on a hot griddle. (Here is the cast iron griddle I use and love.
