Sometimes we like to have breakfast for dinner. So, when Alicia mentioned to me that she made homemade blueberry syrup and she thought it would be great to blog about, I thought it was a great idea! Unfortunately, she hadn't taken any pictures, and she was out of blueberries. "You'll have to do it mom," she said. Since I had just gone grocery shopping and had found blueberries at a great price, I decided that last night would be a breakfast for dinner night!
Of course, I had to take it a step further, because that is my way. What goes great with blueberries (and just about all berries) but lemon? So, I thought, how about Lemon Pancakes? Well, let me tell you, that was a good thought! These things are so good! I used healthy ingredients like lemon, coconut oil and coconut milk. Not only is it breakfast for dinner, it is like dessert for dinner!
Be sure to start making the syrup first, to give it time to reduce. It is still kind of thin when you serve it warm, but the leftover syrup in the fridge is thicker.

Yesterday I gave you my recipe for Blackberry Lemon Bars. Well, not only were blackberries on sale, a couple of days later, blueberries were on sale! Whoot! Lemons and blueberries go together just as well as blackberries and lemons do. Around my house, we love a nice warm dump cake, and I thought I would just mix it up in the crock pot for a nice rainy day warm dessert. Here is how I did it, then click on the button for the recipe! Once again, the zester gets a workout, and this time I used the citrus squeezer. This is so fruity, you may be tempted to eat it for breakfast. I am not judging. It is just very hard to stop eating it. The lemon brightness with the blueberries is just perfect! It is super easy to make, so I hope you give it a try! I woke up this morning just a little under the weather. You know, sore throat, headache, really tired...and since there were no students today at my school, I decided to call in sick. I hate doing that, I am really conscientious about going to work and usually I will myself to be well, (as well as sending up multiple prayers that I just do not have time to be sick!) But, I actually called in sick this time and since it has still been chilly here in Phoenix, I decided that I would take a nice soak in the tub. Luckily I had these! That is right! They are Bath Bombs made by my daughter-in-law, Korina! I threw this kind in my tub this morning: It smelled so good and cleared my head! I felt so much better! Korina makes these bombs with essential oils. You will love them. Here is her contact information if you want to order some for yourself: kdbreynolds20@outlook.com Since I was feeling better, I decided that I had better do something with the blueberries I had purchased a few days ago on sale. They were some really nice ones! I had thought that I would just can them or make blueberry jam. But since I am sick, I didn't want to put in that much effort. So, I just made some delicious blueberry muffins and then froze the rest for a latter time. Here are the baggies of berries. I put about a cup of blueberries in each bag because that is how many I put in a recipe of muffins. Here is my quick, delicious blueberry muffin recipe. Blueberry Muffins In a 2 quart mixing bowl, mix together the dry ingredients which include: 1 3/4 c. flour, 1/4 c. sugar, 3/4 tsp. salt, 2 3/4 tsp. baking powder. Melt 1/3 c. butter, add 3/4 c. milk and 1 egg. Mix these together by hand very well. Make a well in the dry ingredients and then pour the liquid into the well. Mix everything together by hand until all of the dry ingredients are mixed in. Fold 1 c. blueberries into the mix. I like to use my cookie scoop to fill the tins. I usually put about 1 1/2 scoops into a cup. You put them in a 400 degree oven for about 23 minutes. (preheat, I forgot to tell you.) They will come out looking like this. Hope you enjoy them! Now I am going to take a nap, and/or read a book. I am under the weather!
