Thank you for your support. Lindsey and her family gave me a new Cuisineart Ice Cream Maker for Christmas! I know! I know! For a couple of years now I have been promoting the KitchenAid Ice Cream Maker attachment. But, I've gone through 2 of those bowls and they have ending up cracking and disappointing me. I don't know why! Alicia has had one for longer than it has taken me to go through 2 of them with no problems! I never put mine in the dishwasher and I tried to follow all of the care instructions carefully. I never dropped it. So, I don't understand!!! I tried both the brand name and generic types with the same result. But, here is the plus side. Now that I have this Cuisineart Ice Cream Maker, those of you that don't have a KitchenAid can try a different alternative for making your ice cream and using some of the great recipes that we have put on here in the past. Because, frankly, these two machines work practically in the same way. I think the Cuisineart may be slightly smaller, but so far I haven't had to adjust my recipes. That brings me to the real topic of today's post, and that is ice cream sans heavy cream! ("sans" means "without" in French.) There are a few reasons that I tried this method of ice cream making out:
There is a secret ingredient that makes these recipes possible and that ingredient is (dum duh duh DUH!)...Sweetened Condensed Milk! I just happened to have sweetened condensed milk on hand, unused after holiday baking. What a perfect way to put it to good use! The beauty of making ice cream with sweetened condensed milk is that you will most likely not need to add sugar to your ice cream base. And, you can add regular milk and other ingredients to the mix for a great result. The sweetened condensed milk will carry the load of the creaminess! You will see what I mean when you see my first recipe. I didn't want to start with plain vanilla ice cream. I felt like that would end up mostly tasting like the sweetened condensed milk. I realize that isn't necessarily a bad thing, but I needed some freshness to go with that flavor. I started looking around my pantry and freezer for ideas for an ice cream flavor when I saw my frozen peach nectar that I had made and frozen with some leftover peaches I had canned. Peach nectar is basically just pureed peaches. I love peach ice cream, so I decided that this was the direction I would go in. It came out so great! When you make yours, just puree up some peaches if you don't already have some peach nectar and add them as part of the liquid of the ice cream. Next time, I may even add a little bit more. Remember, when you make ice cream, it will first be soft set, but after a couple of hours of ripening in a freezer container in the freezer, it will be perfectly scoopable. The next recipe I tried came a couple of days later when I was gifted bags and bags of fresh oranges from a friends tree! I have posted here about how to preserve citrus. What better way than to make some orange sherbet and preserve it in my freezer? ;) I have been wondering about making sherbet ever since I started making ice cream regularly. So, I thought why not try it now with Sweetened Condensed milk? I think I love this recipe even better than the peach! You'll need to give them both a try and let me know which one you like best. The recipes that I have made in my KitchenAid should also work in my Cuisineart and vice-a-versa, so which ever ice cream machine you have, feel free to use them all!
