In honor of that I decided to put up this round-up of pumpkin recipes! As you all should know by now, pumpkin is one of Lindsey's favorite flavors and many of the recipes using pumpkin on our blog are hers! There is going to be a lot of deliciousness in this recipe collection! Often, when you think of pumpkin recipes, you think of pies, cakes, rolls, pancakes....you know, the sweeter side of things. But, here on the blog we have many main dishes made with pumpkin as well! I decided to share some of our favorites with you. My #1 Choice- Pumpkin Chili! If Lindsey gives me a choice of something to make me for dinner, this pumpkin chili is almost always what I ask for. She makes it a little milder for me, but you can make it spicier if you like it that way. I feel like is one of the best uses of ground turkey that there is. This chili is just so flavorful and I just gobble it up! Click the link to go to the post for the recipe and better instructions. Then, you will have a nice collection of pumpkin dishes at your fingertips! I made this recipe for another of Lindsey's birthdays! It fed a lot of people, just increase the chicken that you put in this wonderful sauce with quinoa and rice. This recipe is a great way to use up a little extra pumpkin puree that you may have after baking pumpkin bread or rolls! I recently posted about pumpkin dinner rolls that would leave plenty of pumpkin to make this chicken to eat along with the rolls! LOL Okay, these might need to be dinner tonight! Use this in so many ways on whatever your favorite past is! So, Happy Birthday Lindsey! We all love you and may you have many pumpkin treats today, both savory and sweet!
