Uses for Jam that you may not have expected!

      Making jam is something that I have been doing for many years.  Sometimes people wonder why I have so much jam in my pantry.  To me, jam is a staple, there are just so many things you can use it for besides your morning toast or lunch time pb&j.  Since we are working on publishing our jam recipe book, I thought I would get you ready for that event by letting you know about some of the unexpected ways that you can deliciously incorporate jam into your meal plans.  (They aren't all dessert recipes!)  Most of these recipes are from our own blog, but I'm also going to share a few that I am hoping to try soon!

ÆBLESKIVER:  We have two versions of these delightful Danish bites posted on this blog.  A very authentic version posted by Alicia, made in an ÆBLESKIVER pan, and some less authentic ones made in a cake pop pan.  Both are delicious filled with a jam flavor of your choice!

Jam Thumbprint Cookies:  I loved making these with my mom as a kid!  It is fun for kids to make the indentation with their thumbs and then to fill it with sweet jam.  I recently made some of these for the jam class that I taught so that people could try a variety of jams that are going to be in my jam e-book!  They look so pretty on the platter and everyone loved them.  We've also shared a 3 ingredient version of these cookies on the blog using a cake mix and pudding!  Also delicious!

Strawberry Shortbread Cookies:  These cookies are a little more work, but totally worth the effort!  The jam with the creamy lemon filling is such a delightful combination!

Jam Muffins:  These muffins are just as easy to make as regular muffins, and extra tasty!  My grandkids love them!

Monte Cristo Sandwiches:  Another use in a breakfast food that I adore!  A combination of French Toast and a sandwich, why wouldn't ya?

Cake Filling! Strawberry, Raspberry or Cherry jams are all great choices as a cake filling.  Check out how I did a vegan cake with a jam filling for Maddy! 

I am dying to try out this Blackberry Jam Pie from Windstone Farms.  They don't even have a picture of it, but it sounds so delicious.  I just canned some Blackberry Jam, so I might whip this up today! I'll take pictures and show you if I do.

Jam Swirls in cheesecake, bundt cake and yogurt are all wonderful used for jam! 

The Seasoned Mom shares a 3 Ingredient Apricot Glazed Chicken that looks fantastic and so easy to make! You may have all you need to make it in your pantry already! 

Finally, most of us have heard of adding grape jelly to your meatball sauce to make a sweet and savory appetizer meatball.  I came up with a different version using Apricot Jam.  I'll  share it below! You can use your favorite meatballs, whether homemade or from the freezer section of the grocery store.  This recipe has the version of meatballs that I made the other night, plus the wonderful sauce.  I hope that you enjoy it!

Blackberries are in season and what to do about it!

     I am teaching a jam making class this weekend, so I was looking at fruit prices to see what kind of jam I was going to make.  Blackberries are in season and I've found some good prices on them, and if you know me, you know that I love blackberries, so blackberry jam is a no brainer! I decided that I should put together a post that shares with you a collection of the great blackberry recipes that we have loved here on the blog! 
     I've already canned some blackberries in pint jars all by themselves this season.  These are great to have on hand for a quick pie, cobbler or ice cream topping.  They don't last long in our house!

     Speaking of cobbler, blackberries and peaches make a great mix in my mom's old recipe that we love!

     We can't forget blackberry pie either!  It is just so sweet and delicious!  Those home canned blackberries make it a cinch.

     One of my personal favorites is this recipe for Blackberry Lemon Marmalade.  It was the first marmalade recipe that I came up with all on my own.  I was so proud of how great it turned out!

     I made this No-Bake Blackberry Cheesecake for Lindsey's wedding reception.  It was one of her favorites!

     As a twist on regular lemon bars, I came up wit this recipe for Blackberry Lemon Bars.  They are so good, absolutely to die for!  I've talked about them a lot on the blog.  If you haven't tried them, you must!

     Those are my personal favorites.  There are a few other recipes that are also great if you search "blackberries" in the search bar, but these are ones you definitely need to try!  I'll post the jam recipe soon, after I get through teaching the upcoming jam class!  Wish me luck!

Amazon Prime Deals that are Calling My name!

    Amazon Prime Day officially begins tomorrow, but there are early deals already going on!  I have to admit that I have been doing a little window shopping.  This is a great time to get some smokin' deals on things that you have been wanting but may have been a little to pricey to splurge on.  Here are some items that I've been looking at.  I can't buy them all, and the decision making is on.  What do you think I should go for? Hurry!  There is no time to lose! ​
A choice of 2 tablets-
    My tablet is a few years old now and it won't work without being plugged in, even though it says it is 100% charged.  My tablet is an important tool for me when I work on the blog, so I am in the market for a new one.  I currently have a Samsung, but here are the choices I am looking at on Prime:

    There are also great deals on Echo Products right now.  I am toying with the video version because I think it would be awesome to be able to talk to my grandkids on it face to face.  Plus, when you play music, the words can come up like karaoke! This one: Echo Show 5 (2nd Gen, 2021 release) | Smart display with Alexa and 2 MP camera  is $34.99 through tomorrow! 
    I'm also really tempted by this Air Fryer/Toaster Oven Combo.  Lindsey has an air fryer that she uses a lot, and I think it would be perfect for my home life now as well.  Plus, I think the combination with the toaster oven is awesome! 
    Here is a true story, we had a cheap little side table that sat next to my husbands chair in the living room.  I've been wanting to replace it.   Then, my grandson was at our house last week.  When I came out of my room in the morning, he was in the living room.  He immediately confessed to me that he had broken something.  He showed me that the little table was broken all to pieces.  (Kudos to him for telling me right away!)  I wondered how it had become so broken and asked him if he had sat on it.  No, he had not he assured me.  He whispered to his mother that he had stood on it! LOL What luck that he wasn't hurt! So now, I am looking for a better replacement side table!  AND LOOK, Amazon has one on sale that will go so well with my bookcases in that room! 
     Finally, neither Alicia nor I can pass up a good deal on office/school supplies! There are a lot of deals on Amazon right now.  My two favorites are these sets of pens!  How can anyone live without these?

Cooking With Kids at our family reunion!

     A little over a week has gone by since we came home from our wonderful family reunion in Star Valley Ranch, Wyoming!  Maddy is going to tell you all about it in a later post.  But, since we have been focusing this summer on cooking with kids, I wanted to let you know that our cooking fun continued while we were in the beautiful cabin that we stayed in.  
     As with any vacation, one of the highlights was the great food that we ate!  We arrived at the cabin on Father's Day, which also happened to be my husband's birthday.  We celebrated that evening with a cake made by my granddaughter, Shyanne.  Actually, to feed all of us, she made 2 cakes!  When it came to frosting, we had to improvise because we only had enough powdered sugar for one cake, but thankfully some chocolates that I happened to bring along came in handy! We just melted them on top and spread them like a frosting!

    One of the best things about cooking with my grandkids is the times that we laugh and talk and get to know each other.  I love watching my grandchildren interacting with their cousins and develop good relationships.  
     Since one of the things I did with my grandsons was make cookies from a store bought tub of cookie dough, it was pretty simple and there wasn't measuring or math involved, except that I did explain rows and columns to them as we scooped the dough on to the cookie sheet. 
      I made a little video, (very amateur) of a couple of our cooking moments that we captured.  These show cousins working together and Aunt Maddy with nephew, Kyle, working together.  I hope you enjoy it and that it inspires you to make some cooking memories with your kids and grandchildren.
