Last week, when my granddaughter Emily and I were making dinner for some of our family, we tried to bake some dinner rolls but discovered that my oven wasn't working. So, it was time for a new oven which should be delivered in a couple of days. I'm pretty excited about it. Sadly though, there were no dinner rolls that night and no baking happening until the new range gets here. But, it's summer so you are probably thinking, "Helen, you don't bake during the summer anyway!" That is normally true, but now that I'm without an oven, I guess I'm noticing how much I actually do still use it during the summer! Besides that, I've been the recipient of lots of peaches lately and how can I not bake when I have these sweet, delicious, fuzzy gems to use while they are perfect? I mean everyone expects Canned Peaches, Peach Pie, Peach tarts, Peach Cake, and most of all, PEACH COBBLER! Then, I got to thinking that surly with all of the kitchen gadgets that I have, there must be a way to make a peach cobbler that doesn't require an oven! And, of course there is, there is the Instant Pot! If you have a huge crowd, this cobbler in the Instant Pot isn't going to help you out much, but there were only 3 of us eating at our house on this particular day, but we certainly felt like we were feasting, even though my oven wasn't working!
