Baked Flounder
We love eating seafood in our family, but as you know, it can be pricey!
Alicia found a great price on frozen flounder filets at her local Kroger store in GA, just $5.00 for a package of about 7 or 8 filets!  I've found the same deal at my Kroger store (Frys)  here is AZ, so if you have a Kroger store near you, I'll bet they have similar deals.
Alicia hadn't prepared flounder before.  It is a tender white fish with a delicate flavor.  She looked around for recipes and didn't have the ingredients called for for the one she found.  She decided to make up her own recipe.   It quickly became a family favorite!  Her children scarfed it down and asked for more! When I went to visit her after she had her most recent baby, she prepared this flounder dish for me and I knew that it needed to be shared on the blog!

Frozen fish can be a great option when you want to add more seafood to your diet.  Fish freezes well and the taste, while not quite as good as fresh, still holds up and can be very delicious.
This recipe doesn't take very many extra ingredients to make it delicious.
  • Olive oil and butter combined with Italian dressing create a wonderful sauce  to use over the fish with a side dish of rice.
  • Another budget saving trick that Alicia uses is making her own seasoned bread crumbs.  When she has left over bread ends, she pops them in the freezer to save for when she needs bread crumbs.  She seasons them with oregano, basil, onion power, garlic powder and seasoned salt. You can adjust the seasoning to your own taste.  She used the breadcrumbs to top this dish.
  • This dish is so quick to prepare, yet it looks and tastes like you spent a lot of time on it.  If you already have breadcrumbs prepared, you can probably have it in and out of the oven in about 35 minutes.  Meanwhile, prepare your rice and veggies to serve with it!  Voila! Dinner is served!

As I mentioned earlier, Alicia's family love this recipe and it is becoming a part of their dinner rotation.  I know that I am adding it to mine as well!  If you are a seafood lover, I'm sure you will love it, too! Let us know how you like it!
