My youngest son and his sweet fiancé were married! Everything was beautiful, and as often happens, I came home from the reception with lots of leftovers and perishable things that I didn't want to go to waste! Thank you for your support. I am very picky about muffins. I do not like dry ones! They must be moist, flavorful and if they have a streusel topping then that is even better! Luckily, this version of banana muffins really fit that bill and hit the spot! I also love it when you don't have to mix up muffins or quick breads in a mixer. For years I have used my Tupperware Mix and Store Batter Bowl for making everything from cupcakes, to muffins to pancakes. That pour spout is just so handy when it is time to fill cupcake liners or to pour out pancake batter onto a hot griddle! My Tupperware bowl is getting a little worse for wear, but I still use it. Plus, I also have a Pampered Chef version in glass. When I'm not using my Kitchen Aid Stand Mixer, these are the best bowls to use when mixing with a portable mixer or by hand. There are quite a few versions of this type of bowl, such as this one by Anchor Hocking or a set of them in stainless by Rorence. This recipe can be all mixed together in one of my favorite mixing bowls by hand in no time and then popped in the oven. It is a quick clean-up after that which is another reason to love this recipe. Using up black bananas? Check! This recipe uses 3 of them! Will feed a crowd? This recipe makes about 18 muffins, so not bad! Since I made them for just myself and my husband, then shared some with friends, we still have a few on day 3. But guess what! They are still as moist and delicious as day 1! So check and check! It helps to keep them stored in an air tight container of course. I'm using my Tupperware 12" round container. It is always my go to for muffins, cupcakes and cookies. The brown sugar streusel topping adds the perfect crunch to the tops of these muffins because the muffin itself is so soft and moist. Together you get the perfect combination for what tastes like the perfect muffin to go with your Hot Cocoa Bomb, or your hot apple cider! (I've tried them with both!) Some mornings you just want a delicious muffin, but when you think of all the work required and the time it takes you settle for your cereal again. Well I'm here to help because I have developed this recipe for a scrumptious and healthy muffin in a mug. This muffin is sugar free, gluten free and actually has two servings so you can share it with someone you love or save half for later.
Banana Oat 3-minute mug muffin
I was hesitant when I first tried this recipe because I'd never had a mug muffin before and I was basing my microwave version from a regular muffin recipe. But I'm happy to say it worked beautifully, and it was so easy. I think it would be easy enough for your kids to make themselves breakfast in the morning too. I also love that it is so fast, so even if you wake up late you can still have a delicious and nutritious breakfast. The chopped dates add the perfect amount of sweetness to the muffin and you can adjust the quantity to your liking.
I ground my own oat flour a couple weeks ago and used it for this recipe instead of all purpose. With the oat flour, the muffin tastes similar to bran muffins (which I love). The home ground oat flour makes this recipe gluten free! Grinding the flour was so easy with the grinder my parents got us for Christmas. I've used the oat flour in a few different recipes and I have loved it. If you don't have oat flour I think you could use all purpose flour and get a delicious muffin still, it probably won't have the bran like texture and flavor though.
I hope you can try this recipe and enjoy it like I have. I like to put some butter on my muffin right when it comes out of the microwave.

When the girl's and I got together to discuss blog business over the holidays, one of the things we all agreed on is that we all want to be more healthy this year! Personally, I feel very motivated and I feel like if we all encourage each other throughout the year, we can achieve our health goals. Many times we have heard people say that if they just start to live in a more healthy way, weight comes off and they see progress. But, I know that in my case, I need specific goals set that I can work on and change about my eating habits and exercise plan or nothing will ever happen.
Many of us want to lose weight, some of us want to strengthen our core or our upper body strength. Maddy is training for a 1/2 marathon. So, to achieve these goals we each are making plans that will help us reach them. One part of my plan is to cut back on sugar intake and to avoid mindless eating. You know, when you walk by some cookies, pick it up, eat it and THEN remember that you were going to avoid eating sweets and your weren't even hungry anyway? In 2020 we will be trying to show you a lot of healthier posts when it comes to food, more activities that encourage a healthy lifestyle as well as our DIY posts that you have let us know that you enjoy. I am going to start this year with these Lighter Blueberry Banana Muffins. The original recipe came from A Sprinkle of Joy, but I tweaked it a bit to lighten it up and give it more banana punch. I replaced the sugar in the muffin with agave nectar, but there is still sugar in the topping. The sweetness of the fruit doesn't let you miss the sugar in these muffins. They were really good!
