I've been trying to come up with a good gluten free, vegan cookie recipe for a friend of mine that has PCOS. I wanted them to be easy to make and, of course, delicious. Through lots of trial and error, I've come up with the vegan, gluten-free pumpkin chocolate cookies!
Personally, I think these are absolutely what I was going for! They are soft and the texture is very similar to regular cookies (I'm usually not a huge fan of the texture of gluten-free cookies! These vegan, gluten-free pumpkin chocolate cookies are soft, fall apart in your mouth, chocolatey goodness. The pumpkin flavor isn't too strong and instead is a nice compliment to the chocolate. They're perfect for this fall season and heading into winter! They would even make the perfect dessert to bring to Thanksgiving to accommodate a loved one who may have allergies.

Since the temperatures are finally starting to cool down here (don't get me wrong, temps are still in the hundreds here, but lower hundreds feel better than where we were) I feel like it's time to inundate you with all of the pumpkin things I can think of.
I've been baking a lot of cookies lately, and I am going to share them all with you, starting with these delicious, fluffy, soft pumpkin chocolate cookies! I had a little leftover pumpkin from another recipe, and I decided to try and add it to a chocolate cookie recipe, because fall is the time you're allowed to add pumpkin to everything and nobody can get mad. There are no regrets! These cookies are so soft and tasty. We shared them with family after dinner. I did decide that the next time I make them, I'm going to top them with cream cheese frosting. I'd probably add a little pumpkin extract and a teaspoon of pumpkin spice. I think that would taste amazing with these delicious, chocolate, pumpkin, soft, fluffy cookies! Now, for all you weirdos that don't like the taste of pumpkin (I mean, I love you, but I'm worried about you) the pumpkin taste is not overpowering. The chocolate is definitely the star of the show. These cookies have no eggs, the PUMPKIN takes the place of the egg. Did you know pumpkin is an eggcellent solution to any "I can't have delicious chocolate cookies because of my egg allergy) problem anyone might be suffering from? Well, it is. Use pumpkin and don't use eggs, and your chocolate cookies will be amazing, and still so light and fluffy. So, without further ado, here is the eggless pumpkin chocolate cookie recipe you need!

Once a week, I have lunch with my grandchildren and their parents who live near me. I always bring lunch and try to mix it up each week with different things. My 4 year old grandson, and his baby sister LOVE milkshakes. Since the weather here in Phoenix is definitely good milkshake weather, I thought we should have a milkshake contest and find out which fast food restaurant has the BEST milkshakes.
I was amazed at the definite opinions these little ones had! One milkshake, that I usually love and thought would win, must have had something wrong with their machine that day, because it tasted terrible and very chemically. My grandson tasted that one before anyone else and declared it was awful tasting. We all agreed! I'm not going to tell you yet who won. Actually, it is still an on going process and we may have to have a run-off to find the winner. Besides, I don't want to influence your choices when you try this fun activity with your family! But, here are some tips on how to make the Milkshake Contest work with your kids.
First of all, I created this printable score sheet to give to everyone to use as a tally for their choices. There is space for 5 different milkshake brands. Of course, you don't have to test that many in one day. We did 3 one day and 2 another. I went and purchased all of the milkshakes and took them to the house where we were having the competition. A better and easier way would be to do the following:
We tested Culvers, Jack in the Box, Sonic, McDonalds and Burger King Shakes. If you have a favorite shake in that general price range, let us know in the comments and we will give it a try!
I also got to thinking that you could do this contest with homemade shakes. Get a few blenders together and see who makes the best! Any excuse to have an ice cream treat during 116 degree weather is great! Let us know if you give it a try and who you think makes the BEST CHOCOLATE MILKSHAKE!
