In my last post, I shared my first experience making yogurt. One of the great things about making yogurt is that you can use it for so many things. One of the things that I wanted to do first was to make cream cheese from the yogurt and make a cheesecake. Just like making the yogurt, turning it into a cream cheese substitute is very easy.
The first thing that you have to do is drain the yogurt until it is much thicker than the yogurt that you would normally eat. Since I needed about 2 cups of cream cheese for my cheesecake, I measured out about 2.5 cups of yogurt into a clean flour sack towel and put it into a strainer sitting over a bowl. The bowl will catch the extra whey that will drain out. Leave the yogurt to drain in the refrigerator over night. You could also use your regular yogurt strainer. I didn't because my yogurt amount was so small that I could take up less room in my fridge by using a smaller bowl and strainer.
When your yogurt is finished draining, it will look like this. Next you use it just like cream cheese and make your recipe as you normally would.
I decided to make a Lemon Blackberry Cheesecake by baking the lemon cheesecake base and then topping it with a stabilized blackberry whipped cream. I used lemon oil and lemon zest to flavor the lemon cream cheese base. It came out pretty awesome. Here is the recipe:

They are potent ingredients and need to be handled with care. Oils can burn skin and eyes and cause severe illness if ingested incorrectly. While I find oils to be a wonderful tool in my well being, it is important to learn about them and to know how to use them carefully. I am definitely not an expert but I value the expert advice that I have been learning from many sources. Always do your homework! So, here it is, my simple recipe for a Blueberry Lemonade De-Tox Refresher! Be sure to use a blender that is good at breaking up ice cubes! There you go! Super simple! Bottoms Up! *Just to be clear, Lemon essential oil comes from the skin of the lemon, so there will not be the added benefit of fiber in this smoothie when you use the essential oil. Did you know International Pancake Day is next Tuesday (February 16, 2021)? Hello everyone! I am here with the perfect lemony recipe for these hot summer days. (Is it hot where you are? We are sweltering here already.)
I love lemon desserts because even though it is boiling lava hot outside, if I have a bite of a tangy, lemon dessert like this Lemon Curd Tart I just feel light and refreshed. Have you ever made lemon curd before? It's pretty easy to make. If you make this lemon curd recipe and don't want to put it in a tart, skip the gelatin part. I just added that to make sure the curd would be perfectly set. The other great part of this Lemon Curd Tart is the Coconut Flour Crust. As you well know, we have a great pie crust recipe. I am loathe to try any gluten free pie crusts because the few times I have previously, they did not turn out well. I like this coconut flour crust because you press it into the pan instead of having to try and roll it out in advance, which is when all the gluten free crusts I've tried have fallen apart and ended up in the trash. I felt like the coconut crust was the perfect compliment to the lemon tang, and it wasn't a strong coconut flavor so it was a perfect balance of flavor. My husband was happy because he could actually eat a slice instead of just trying to get the middle like I usually make him do. This Lemon Curd Tart recipe is going to become a summer staple in our home, and I think it will in yours as well! |
