Thank you for your support. One tradition that we have for Christmas Eve is to keep our meal simple. We generally have a couple of kinds of soup. I shared a post about this here. Soup is such a warm hug type of food, or comfort food in other words. Recently we had a women's Christmas Dinner and Program at our church. I am on the planning committee for these activities and our committee decided to have a buffet of soups for the dinner. If you haven't ever been to a soup buffet, I also wrote a post about that on this post. We had about 9 different kinds of delicious soup and the night was wonderful! My contribution to the buffer that night was two kinds of soup. One was the ever popular Taco Soup, with toppings of tortilla chips, sour cream and cheese. The other was this Salmon Shrimp Bisque that I came up with as an alternative to the much more expensive Lobster Bisque. Whenever I come up with a new recipe and try it on people, I am always a nervous wreck. What a relief when I discovered that this soup was practically all gone by the end of the night! Whew! I actually made this soup in my Instant Pot. I was able to sauté the veggies in it and then after everything was mixed together, I used the Instant Pot as a Crock Pot to simmer the soup in until it was time to serve it! One pot equals less mess and I love that. Not only that, with the lid on the Instant Pot, transporting the soup was an easy task. No spills! If you don't have an Instant Pot, you can always use your Crock Pot and simply start the vegetables in a skillet on the stove. I haven't decided if I'm going to make the switch from clam chowder this year and go with this bisque or stick with tradition. My son is also doing a duck for Christmas Eve this year, so things are going to be a bit different than the norm. That's okay though, as long as we keep the reason for the season in mind and spend it with as many loved ones as we can, I know that it will be a great Christmas. Thank you for your support One family member, my son's mil, Anita, is always so supportive of our blog. She is so talented and always has ideas and inspiration for our blog! This past Christmas, she sent me a yogurt strainer. She showed me her results of making yogurt in her Instant Pot and where she found the recipe. I got so excited thinking about all of the things that I can use this strainer for and for all of the things that I can do with the yogurt. Unfortunately, I discovered that my Instant Pot Lux does not have the yogurt setting. But, I knew that before there were Instant Pots, people still made yogurt. So, my search began for a way that I could make yogurt without an Instant Pot. I found many ways! I used a combination of those ideas and experimented on my own, as is my way. Guess what! My very first experiment was a great success and it was so easy that I can't believe that I haven't been making my own yogurt all along! I made a video of myself making my very first batch of homemade yogurt! Watch it, and then I will list some highlights to help you make your own yogurt without an Instant Pot as well! I don't know why it is called Butter Chicken, but that is really neither here nor there. The only struggle with a Crock Pot is you have to have the patience to let it cook. PH and I almost didn't have that patience with this Butter Chicken recipe but I am glad we did! It made me very very happy. I want to say so many other things but the technical difficulties are prohibiting me from sharing with you more Butter Chicken love! So, I am going to keep this brief and just tell you to pull out your Crock Pot (or whatever slow cooker brand you own) and make yourself this Butter Chicken and be happy. PH found the original Butter Chicken in the Crock Pot recipe here. He tweaked it by omitting the coriander pods and including a teaspoon of chili powder. Do these things, and be happy! |
