This is my last German dinner post! Just to recap, each month I am choosing a country and then once a week cooking a meal from that country. January has been Germany. See my previous posts on this adventure here, here, and here!
It has been a very delicious and fun experiment so far. And as a bonus I have made a German dessert that I’ll be sharing with you on Thursday! I’m taking over Renny’s Recipes this week, so stay tuned. Today’s dish is rinderrouladen and potato dumplings. Both of today’s recipes are from Germanfoods.org. Rinderrouladen
A rouladen is a roll-up and a rinderrouladen is a beef roll-up. It’s so good you guys and I didn’t even make it right (I think)! I really was trying to make an original recipe for you here but I feel like it still needs perfecting. As such, I will just link you to one of the base recipes I used and tell you my tips for it. Hopefully in the future I can update this with the recipe. (Because I will be making this again.) It was so delicious!
It’s a really thin cut of beef round or chuck. I used bottom round and chuck to try them both. Then rolled up inside is bacon or ham, caramelized onions, and a pickle. Then it's braised in beef stock for about an hour. I couldn't tell the difference between the two different cuts of meat.
Here are my tips:
This could be a great thing to make for a special occasion, like Valentine’s Day at home, a birthday, or anniversary.. The meat can be kind of expensive so it’s not an everyday meal. Potato Dumplings (Thüringer Klöße)
I have never in my life made dumplings, nor watched anyone make them. And though I have had these before and really liked them, mine turned out like weird mashed potatoes with toast stuffed inside. Also mine came out huge and only half the batch came out of the water in tact. I think watching a video of someone making these would have been beneficial for me.
Don’t get me wrong they were still good with the gravy, but I wished I had just made mashed potatoes. I’m calling it user error. I didn’t use the recipe I’m linking too, but I wish I had because it seems more detailed in the instructions. Because I need to practice these more I have no tips for you. But if you try them let me know how they turn out. I found a mix for them on Amazon that I might have to try.

Have you watched the Great British Baking Show? I absolutely love it! The people are so polite to each other and the feeling is so different from American cooking shows. Plus, they make many things I have never seen, or at least their versions are different from ours.
My DIL hadn't seen The Great British Baking Show. I was appalled and started her off on the first season on Netflix. It was great to watch again and one of the first things that they made was a spiral rolled cake. Whenever they make things, it makes me want to try them myself. This time I thought of the recipe I have for this party cake roll that I call a Swiss Cake Roll. I think that it would be perfect for Valentine's Day. Unfortunately, I thought of that idea after we made it and ate it. But, just add a few sprinkles or some piping and you can decorate this cake anyway you would like. It is delicious with a luscious cream cheese filling and chocolate frosting. We have a frosting recipe here that is perfect, just add some cocoa to it for the chocolate version.
Look at the spiral. Merry Berry would say that my filling is too soft so it hides the spiral, but let me tell you, Ms. Berry, it is delicious!

It is Valentine’s Day, and I am so glad it is almost over. Don’t get me wrong, you know that I am a romantic at heart, but let’s look at this time of year and everything that has happened since Christmas. After Christmas, there was New Year’s Eve. Many of our friends and family throw after the holiday parties, since there was no time for another party during the holidays. Then there was the Super Bowl, now Valentine’s Day and let’s not forget the various birthdays and anniversaries that have already happened. What do all of these events have in common? Food! If you are invited, you usually bring something to share. If you are throwing the party, you provide numerous snacks and treats. I am not complaining. I love food. But, I do get tired of the same old chips, dips, cookies and cupcakes. This year I searched and experimented to find some appetizers that are a little different from the norm, just to spice things up a bit and add something new to the mix. In our family, most of us love bacon. My oldest son is notorious for loving bacon. Whenever you see a recipe on Facebook that features bacon, he will probably be tagged so he can see it because everyone knows he loves it. That is why when I received Jan D’Atri’s email telling me about Candied Bacon, I was intrigued. (If you recall, I shared Jan’s recipe for Stinky Pretzels a couple of months ago.) Jan’s Candied Bacon Recipe was made with beer. If you are okay with using beer in your cooking, her original recipe can be found here. There is also a recipe for Bacon Crack that looks delicious as well. We don’t use beer, so I decided to try the Candied Bacon with ginger ale. It is still an experiment in progress, but so far it has been a tasty, tasty experiment. Then, I started looking through the Panna site for some good appetizers and guess what I found? A recipe for Candied Bacon! They served it with Tomato Soup. You can go here to see the preview of the recipe and to subscribe. In the meantime, here is my experimental version of Ginger Ale Candied Bacon. During the holidays, Adrian and Alicia were here with my adorable grandson, Adriancito. We have mentioned before that Adrian is from Ecuador, and he often cooks a traditional Ecuadorian meal for us when he is here. We shared Bolones and Cheese Bread (Pan de Yuca) in January. Bolones are made with plantains. When they returned home, they left a number of plantains behind. Luckily, they keep pretty well for some time. They look like bananas, but plantains must be cooked in order to eat them or they won’t be very enjoyable. Not wanting anything to go to waste, I began scouring the internet for some recipes to use them in. I found a simple and delicious one. Brown Sugar Fried Plantains are so easy to make and they taste so good. The yellow, sweet plantains are the ones I used. I simply cut them in thick, circular slices. I dredged them in brown sugar and fried them in coconut oil, browning them on both sides. The brown sugar caramelizes and the plantains become soft and everyone gobbles them up! One day, I was checking out a link-up party and I came across this adorable recipe on Living on Cloud Nine for MIni Chicken and Waffles! I fell in love with this idea and had to make my own version for our own Valentines/My sons birthday meal. I want to try Andrea's homebaked chicken version at some point, but because I didn't have time this day, I just used chicken nuggets and Eggos. We served them with maple syrup on the side. The final things that you can see in the background on the table are Pigs in a Blanket. Not really something new, but I made them small by cutting the Nathan's Hot Dogs in half and wrapping them with canned biscuits and then baking them. Then we served them with dipping sauces and condiments. They were surprisingly filling. Some of the other things you can see on our table are watermelon hearts and Blackberry Lemon Bars that I showed you last week. Well, even though Valentine's Day will soon be behind us, it won't be long until the next event comes our way! We are already thinking about St. Patrick's Day, lots of birthdays and Easter to mention a few. Don't get in a rut with your food! Do something a little different! Try a new recipe, make one up and add a little spice to your life.
Lindsey here with this week's edition of Renny's Recipes! This week I decided to give you a healthy Valentine's Day dinner option. I know Alicia did a post about a fun UnValentine's Day Party, but we know some people want to celebrate it and be all lovey dovey, so I am bringing you this delicious meal! I've really gone above and beyond. With this post I have a lot of links to things you can buy to decorate your table to have a beautiful, delicious, romantic dinner at home. First off, you'll need some placemats like these cute ones, or if you want to get really romantic, try these cute heart placemats! The next step, obviously, is some nice dinner plates like these to serve your delicious meal on! But wait, there's more! I've also provided links for your black napkin rings or these really nice napkin rings. Also, you know you're going to need something to drink out of (we'll be having Martinelli's). So here are some nice stem glasses or, if you'd rather, these classy stemless glasses to share your nice sparkly drink. I haven't forgotten the lighting either! Here are some classic tapered candles and I also love these flameless candles that will make your table look romantic, without the melty wax! You'll need these napkins for your napkin rings! Now that your beautiful table is ready, let's get down to the meal! If you remember our first Five Friday Faves, I talked about my spiralizer! You are really going to need one for this Shrimp Pesto with Zoodles recipe, because instead of pasta noodles, you make it with zucchini!! I found this recipe through Pinterest on the website Peas and Crayons, and tested it out this last weekend on PH. We loved it! The best part? Because it's lighter and healthier you don't have to feel guilty about finishing it off with dessert! (Don't worry, I have that recipe for you too!) Now you have the option to make your own pesto sauce, or, if you want something faster, there are plenty of delicious ones you can buy and use instead. I will provide a link to the recipe, but here is one little tip. The recipe tells you to buy uncooked shrimp and then cook it in the skillet for two minutes. However, at the grocery store they had frozen shrimp that was not cooked and still needed to be shelled, and I am not about that life. They also had them shelled, deveined and cooked. So, as you can imagine, those are the ones I bought. Just defrost them in some cool water for a few minutes and then toss them in the skillet with the seasoning before you add in the sauce. After your delicious, light, healthy, romantic dinner, you'll need dessert, and this skillet cookie a la mode hits just the spot! For Christmas my brother and sister in law got us this cast iron skillet that comes with a cookie mix and that's what we ate. You can also get something like this cookie skillet that comes without a recipe and just make your own, like the one I've posted here. We baked our cookie and topped it with this dairy free ice cream (PH is lactose intolerant so we got dairy free as much as possible and this brand really is So Delicious!) This is a yummy, guilt free dinner and since it's a holiday you can splurge on dessert. Sharing a skillet cookie a la mode is the perfect romantic treat! I took a picture of our dinner table on Sunday, but it won't look as nice as yours will, since most of our stuff is already packed in anticipation of us moving.
