Churro Bites with Peppermint Chocolate Sauce (Vegan!!)

​On the eleventh day of Christmas, my true love gave to me Eleven Pipers Piping!

Piping churros that is. In my opinion, churros are an excellent holiday treat. They’re quick to make, sweet and flavorful, and super easy to make extra festive! These churro bites make the perfect shareable dessert and paired with the peppermint chocolate sauce for dipping, they get taken to the next level!

As a bonus, they are totally vegan! Check out the recipe below and as always, read to the bottom for my pro tips that will make this recipe even easier and better suited for the holidays.

My Pro Tips

  • To make these even more festive, toss a tablespoon of red or gold sugar sprinkles into the cinnamon sugar mix. They act like a subtle glitter!
  • Create an easy workflow for yourself. I had my piping bag with churro dough, then the pot of oil, then a plate with paper towels to soak up excess oil, then the cinnamon sugar mix, and then a bowl for the finished ones. Having each station set up and ready to go made things move quickly and efficiently!
  • To avoid overcrowding the oil, I did these ten at a time. I would pipe them into the oil and when they were ready, I would remove them onto the paper towel for a moment before dumping them into the cinnamon sugar. Don’t let them sit on the paper towel for too long as then they don’t hold the cinnamon sugar very well. I only left them there for as long as it took me to get all the churro bites out of the oil. Then immediately move them to the cinnamon sugar and toss. I would cover them in the cinnamon sugar and let them soak up the sweetness while I piped my next batch of churro bites into the oil. As they fried I would then remove the cinnamon-ed churro bites from the sugar and into the “finished” bowl. This was an easy rhythm to get into and made sure each bite was well coated in flavor.
  • I used one slotted spoon to remove the churros bites from the hot oil and another slotted spoon to remove them from the cinnamon sugar mix. This made things so much easier and there was less mess to clean up.
  • When making the chocolate sauce, microwave it in 15 second intervals, stirring between each one. This gives a better quality chocolate sauce as it won’t overheat.

It’s the eighth day of Christmas, but there are no maids a milking here. Instead, there’s a vegan pumpkin eggnog recipe for you! Traditionally made with milk, cream, and (obviously) eggs, this vegan version uses plant based milk, coconut cream, and a variety of other ingredients to create this eggnog and pumpkin pie crossbreed.

I tried out SEVERAL different versions of this recipe, and it has finally received an emphatic thumbs up from a judge who doesn’t even like coconut or nutmeg. So you know it’s a winner!

Turtle Dipped Pretzels Recipe

On the the second day of Christmas, my true love gave to me… 2 Turtle doves, which inspired this Turtle Dipped Pretzels recipe!

If you've never heard of turtles before (the candy, that is) they are typically pecans coated in caramel and chocolate. This is my take on them.


These are a quick, easy, and delicious snack to make for the holiday season (or any season, really). They’re also vegan and gluten free, so they’re great for sharing! Keep reading to the end for my tips on making them.

​My Tips for Making These

  • The caramel hardens quickly, so if you opted to use a microwave to melt your caramel, you may have to microwave again in the middle of dipping. I microwave in intervals of 10 seconds, stirring in between each time until it is all melted. Just be super careful with hot caramel as it can cause painful burns if it sticks to you!
  • My favorite vegan caramel to use is Cocomels and I prefer the sea salt variety, but they also have other varieties.
  • I used Snack Factory gluten free pretzels because on top of being gluten free and vegan, they were the perfect size for what I wanted. All the other gluten free pretzels I looked at were either too small (mini) or the pretzel sticks were way too thin. These are still small enough to be bite sized, but thick and sturdy enough to not easily break.
  • For vegan chocolate chips, I prefer to use Enjoy Life as they are super allergy friendly. But, it is fairly easy to find vegan chocolate chips if you can’t get these ones. Kroger has some in their Simple Truth brand and the giant bags you can get at Costco are also vegan. Just check the labels at your local grocery store and I’m sure you can find some! ​

Thanksgiving is only a few weeks away (are you following our Thanksgiving Prep guide?) and as a vegan, this has always been a time filled with uncertainty for me. 

Let's face it. Most classic Thanksgiving dishes are not naturally vegan friendly. And I don't expect everyone else to cater to my dietary needs.

But it's always nice to have a few dishes that we can all enjoy together as a family. I mean, isn't that part of Thanksgiving? Family togetherness?

That's why I wanted to compile this list of vegan dishes to include at your Thanksgiving table this year. Whether it's for you, a family member, or heck- maybe you're throwing an entire vegan Thanksgiving!- I wanted these to be dishes that are easy to prepare that everyone can enjoy together.

I've also included some tips at the bottom that will help you create the perfect Thanksgiving Spread. Let's jump in!

This Butternut Squash Soup recipe from Cookie and Kate would make the perfect main dish. It's easy to share, warm, and filling. Not to mention butternut squash is perfect for this time of year. Top with nutmeg or some pumpkin seeds for a really beautiful display. YUM!

*Please note that the original recipe isn't vegan, but Kate gives great suggestions for making it vegan.

Mac and cheese was one of the hardest things for me to let go of when I transitioned to a vegan lifestyle (seriously).

But this Vegan Mac and Cheese recipe from Vegan Yumminess reminds us that lack of cheese doesn't mean lack of flavor. And I mean, come on. Looking at that picture you'd never be able to tell it's dairy-free. It's just as creamy and delicious as any mac and cheese should be!

This is the first time I've ever shared this recipe, but it is a Thanksgiving staple for me. 

I've been making this cranberry orange sauce every year since becoming vegan and I don't plan on stopping anytime soon. It's so easy to make and has the perfect balance between the sweet oranges and the tangy cranberries.

Glazed Sweet Potatoes

 Growing up, I was never really a fan of sweet potatoes. It was the same way into my adulthood. In fact, I didn't start really appreciating sweet potatoes until I became vegan. Now I can't get enough of them!

And this Glazed Sweet Potato recipe from Detoxinista is one of my favorite ways to enjoy the little guys. This recipe reminds me alot of a glazed carrot dish my mom has made me before (she uses vegan butter for me). Carrots or sweet potatoes, this recipe is a winner!

Vegan Apple Pie Thanksgiving
Apple pie was always one of my favorites growing up and, luckily for me, my mom's recipe is accidentally vegan! Making this Vegan Apple Pie is definitely going to continue to be a tradition of mine.

Oh and the best part?

The crust is my grandma's recipe and also accidentally vegan! So I haven't had to change a single part of my childhood favorite. Thanks, mom!

tips for the perfect thanksgiving spread

Of course, your Thanksgiving table is about far more than just the dishes you bring (but these vegan Thanksgiving dishes are pretty perfect!). These extra touches will ensure your vegan Thanksgiving is on another level.
  1. Don't run out of rolls. You know that feeling you get when you're eating at Olive Garden and the waiter just keeps bringing out basket after basket of breadsticks? You can recreate this feeling for your Thanksgiving guests. Pillsbury Original Crescent Rolls are accidentally vegan and easy to make. You can roll them all up ahead of time and bake more as needed throughout the evening. That way you always have fresh, vegan bread ready to pair with that Cranberry Orange Sauce.
  2. Keep trays of snack boards available. Pickle spears, olives, carrot sticks, grapes, crackers, etc. all make great quick snacking options you can leave set at the table. Think of them as a palate cleanser of sorts. They help fill out your display and people can (and will) keep munching on these long after they say they're full.
  3. Have a variety of beverages available. Martinelli's has always been one of my personal favorites. More great options are fruit juices, warm cider, and of course water. Be sure to have readily available for your guests as well.

I hope these tips help you. Whether you're able to gather with loved ones to celebrate Thanksgiving this year, or you're confined to the members of your household, I hope these vegan Thanksgiving recipes find their way to your table.
