Then, he requested an ice cream cake! Not just any old ice cream cake, but a Mint Chocolate Chip Oreo Ice Cream Cake. Sounds delicious, right? But, how to frost it? I decided that a whipped cream frosting would be best. I'd made stabilized whipped cream before using a little bit of gelatin and it had turned out just great! But, then he said that he wanted chocolate frosting, plus I knew that I wanted everything to freeze well and keep its shape when it was transported to the party. All I can say is "Thank you Duff Goldman!" because I was watching a cooking show that he was a judge on and I heard him tell a contestant that a Cream Cheese Stabilized Whipped Cream Frosting would have been the best frosting choice for their cake! I never had even heard of that, but I knew it would be the right choice for this cake! Not the best decorating job, but it tasted delicious. There is a thick layer of the frosting, which offsets the sweetness of the mint chocolate perfectly! My Grandson loved it, and that made me so happy! In case you are wondering how I made the cake, here are the layers:
The tanginess of the cream cheese and the relatively small amount of sugar used in the frosting, (compared to buttercream) made it one of the more popular layers on the cake! But, there are plenty of other ways to use this frosting:
