Remember how starting over a year ago egg prices shot through the ceiling and getting a dozen for less than $6.00 was a time for celebration? I don't know about you, but we use eggs a lot in our cooking and baking and while there are ways to substitute them out, there really is nothing like "The Incredible, Edible Egg!" Thankfully, prices have come down quite a bit on eggs. But, I probably still have FOMO when it comes to maybe missing out on good egg prices. So, when I saw my local wholesale produce seller offering 15 dozen eggs for $19.26, I snapped them up! I had eggs coming out of my ears and I loved it! I gave some away, but luckily eggs have a long shelf life in the fridge because we are still finishing them up. Then, my SIL was able to get 15 dozen for $10 where they live in Georgia, so they were in the same boat as I was! All of these eggs got me thinking about how to use them to our best advantage. I decided to put together a list of recipes that have a good amount of eggs as a main ingredient! Breakfast is the obvious place to start when it comes to cooking with eggs! As I looked through my recipes, I remembered this amazing Smoke Salmon Omelet recipe that I copycatted after having it at Mimi's Cafe once. This is a 3 egg omelet, (or Omelette in French), and would actually work for any meal, anytime! Another great breakfast is Eggs in a Pancake Nest! Not really a recipe, just a take on the old method of cooking an egg in the middle of toast. My grandkids and I did it with pancakes and it was fun to do and very tasty! Take a look! Moving on from breakfast, no family gathering in our family would be complete without Deviled Eggs! We specifically like Aunt Karen's Deviled Eggs, but if she can't be there, we will settle for anyone else's! Lindsey posted a great version of Easy Deviled Eggs that we also love! Let's move on to dessert! If you want to use up a lot of eggs, you don't want to miss out on this Fantastic Orange Chiffon Cake! It is mouth wateringly delicious! This tall and fluffy cake is a real show stopper! I think I need to make one soon! This Pumpkin Pie Tiramisu is such a delicious recipe for non-coffee lovers! I'm so glad eggs have come down in price! Look at all of the great recipes they are used in, not to mention cakes and cookies! I'll never take an egg for granted again!

Since we have our own hens, I am always looking for great egg recipes, this is one of my features for SSPS #411!
