Honey Sweetened Fudge Mound Cookies

Honey Sweetened Fudge Mound Cookies
     Way back in 2016, I shared a favorite cookie recipe that was a favorite part of my childhood.  They are called Fudge Mounds.  As you know I've been experimenting with using honey in place of refined sugars and since my non-sugar eating grandson was going to come and visit me, I thought I would try to change this recipe for him to enjoy.  I just have to say, It came out great!  I may prefer it to the original recipe! I sometimes struggled to keep the original recipe moist enough, but the honey in the sugar-free recipe helps to moisten them up and the flavor is fantastic!

     Back in May, I came up with a honey sweetened frosting to go on Honey Orange Cupcakes.  Today, for these cookies, I tried something a little different.  I think the Honey Orange Cream Cheese Frosting would also be great, I just had a new idea and gave it a try.  This time I used heavy cream and cream cheese/butter blend that makes a softer frosting, but my husband liked it so much, he licked all of the frosting off of his test cookie and then held it out for me to pipe on some more! 
      With this heavy cream whipped frosting, I feel like it is important to cover and refrigerate these cookies to store them, but I don't think that they will last long.

​     I think that this recipe would also work as a whoopie pie because of their moist cake-like quality.  You could use the same frosting or the orange frosting as the filling.  Just a thought.

Tools for making these Cookies:
  • Mixer (You know I love my Kitchen Aid!)
  • Cookie Sheets
  • Parchment Paper (I really like the pop-up kind)
  • Medium Cookie Scoop
  • Cooling Racks

     This  recipe is super easy to throw together and I'm sure that your family will love them as much as my extended family does! Unfortunately, my grandson was unable to come and try them after all!  Now I'm going to find out how well they freeze. Then, I'll let you know how he liked them and if they froze well.  In the meantime, here is the recipe so that you can try them fresh!  Let me know if you give them a try!
