Instant Pot Fresh Peach Cobbler

Instant pot Peach Cobbler
     Last week, when my granddaughter Emily and I were making dinner for some of our family, we tried to bake some dinner rolls but discovered that my oven wasn't working.  So, it was time for a new oven which should be delivered in a couple of days.  I'm pretty excited about it.  
     Sadly though, there were no dinner rolls that night and no baking happening until the new range gets here.  But, it's summer so you are probably thinking, "Helen, you don't bake during the summer anyway!"  That is normally true, but now that I'm without an oven, I guess I'm noticing how much I actually do still use it during the summer!  Besides that, I've been the recipient of lots of peaches lately and how can I not bake when I have these sweet, delicious, fuzzy gems to use while they are perfect?  I mean everyone expects Canned Peaches, Peach Pie, Peach tarts, Peach Cake, and most of all, PEACH COBBLER! 
     Then, I got to thinking that surly with all of the kitchen gadgets that I have, there must be a way to make a peach cobbler that doesn't require an oven! And, of course there is, there is the Instant Pot!  
      If you have a huge crowd, this cobbler in the Instant Pot isn't going to help you out much, but there were only 3 of us eating at our house on this particular day, but we certainly felt like we were feasting, even though my oven wasn't working! 
     Here is what our meal included:  
  • A fish fry dinner!  I rarely do frying.  I don't like dealing with all of that oil.  But, I had been craving a fried seafood feast after watching an episode of Guy's Grocery Games, lol.  So, I fried up some flounder, some shrimp and some homemade fries!  Some pickles and watermelon on the side make a great addition to the meal. 
  • A couple hours before dinner I had mixed up some vanilla ice cream in my Kitchen Aid Ice Cream Attachment and put it in the freezer. I knew we would need it to top the ...
  • PEACH COBBLER that I made in the Instant Pot!    
     It was delicious if I say so myself! The warm, cinnamon flavor of the cobbler with that dollop of homemade vanilla ice cream felt like we were beginning to enter the Fall season and was a comfort food for sure.  It is amazing that we can get that effect from food that cooks so quickly in a modern device like the Instant Pot!  
      Here is the recipe, I hope you enjoy it.  If you want a little more crunch on the top after removing your cobbler from the Instant Pot, you can brulee the top with your torch! (I love doing that!) Be sure to click on the recipe for the printable version.

Being that my family is from the south, this resonated with me instantly. Unfortunately, being now recently diagnosed with pre-diabetes - I do try to limit my intake or alter a recipe I find and use alternate sugars available and wheat flour. But the instapot idea....YES!!!! Win 💛
