Making Cranberry Juice From Scratch

Making Cranberry Juice
     I know what you are thinking right now.  You are thinking, "Wait, you blogged about making cranberry juice yesterday!"   And, actually, yesterday I blogged about Cranberry Juice Blends, and I made them in the Instant Pot, a process that I really like!  But, this process for canning just plain cranberry juice is even easier!  Read on and I'll show you how! 
       There is no blending or straining through cheesecloth in this method!  It is as simple as can be.  Here is the process:
  1. Clean and wash your jars.  Then, I like to put the empty quart jars in my steam canner to heat them up and sterilize while I prepare everything else. 
  2. You will need to gather:   *Your canning funnel and tongs  *Your cranberries, cleaned and picked through  *granulated sugar  *measuring cups  *a large pot of boiling water and a ladle *lemon juice
  3. Into each jar, measure 3/4 cup of cranberries and a generous 1/2 cup of granulated sugar and a Tbsp of lemon juice.   Ladle the boiling water over the top of all of that, filling the jar and leaving an inch of head space. 
  4. Wipe the rims of the jars and put on lids.   Shake the jars to blend in the sugar.  Set the jars into the canner.
  5. Process the jars in the waterbath or steam canner for 25 minutes for quarts and 20 minutes for pints.

When they come out of the canner, they will look like this, with the red juice color beginning to spread.
      Allow the jars to sit and seal for 24 hours.  The, shake the jars to spread the read color really well throughout the jar.  
      For the best results,  allow your jars of cranberry juice to sit and steep for about a month before opening and drinking!

After you open the juice, strain out the cranberries and use them in your oatmeal or in a smoothie or maybe even in a apple cranberry pie!

This looks awesome. Cranberry juice is so expensive. Do you use the cranberries that come in the little net bags this time of year or are yours fresh? They look bigger than the ones I see in the stores.

Amy, I used fresh cranberries that I purchased in bulk from a local wholesaler.
