Maple Cinnamon Banana Muffins-No refined Sugar!

Maple cinnamon banana muffins
       Every time bananas start turning brown at our house,  even just a tiny bit, my husband asks me if I'm going to make banana bread!  Like him, I do adore the moist tenderness of banana bread, but this time, I had something else in mind.  
         I think that maple and banana flavor go together really well.  I've already shared with you a version of Banana Maple Buttermilk Bread.  This time I thought muffins would be perfect to make and share with my little no sugar eating grandson. 
     I made two versions of this muffin before I got it right.  I mean, the first ones weren't bad and I shared them with little Logan, but I felt like the banana and the maple flavors were drowned out by the oatmeal that I used in the batter.  So, the second time I made them, I left out the oatmeal and added another egg and 1/2 of a tsp of maple extract.  This time the muffins came out less dense and had more of the flavors that I was looking for.  Oh! I also added a tsp of cinnamon to enhance the maple flavor.

     The maple extract is optional if you would rather have the banana flavor be stronger.  I would love them either way.  My husband gave them the seal of approval.  
      You certainly won't miss any sweetness in these muffins because there is plenty from the bananas themselves and then the maple syrup.  I used coconut oil instead of regular vegetable oil, so I don't feel  guilty about buttering them!

These look great! I love anything with maple syrup in it, and there's no such thing as too many banana muffin recipes!
