If you have been following, because of lots of reasons, but mainly because it is Fall AND I have Pumpkin Puree coming out of my ears because of my highly successful pumpkin crop this year, we have been posting both updated and new pumpkin reels weekly this season! Today, I'm putting up my version of Pumpkin Whoopie Pies, and I think you are going to love them. They are moist and delicious, almost like eating a cupcake, but better! So, click the "Read More" button and get the recipe! They are the perfect Fall treat! Have you ever looked at a Whoopie Pie and thought it looked delicious, and then when you bit into it, it was dry and disappointing? I have. But, that was not the case with these Pumpkin Whoopie Pies! I think the pumpkin and the oil give them the extra measure of moistness that they need. I used my home grown and preserved fresh then frozen pumpkin puree which has a bit more moisture than canned pumpkin, so that probably helped. I'm sure that the canned will work though, you may need to adjust your moisture levels by subtracting some of the flour to get the same results that I did. If you watch our latest video, you will be able to see what the batter should look like before you bake these. Because I am now working with the teenage girls in our church youth group, I tried these out on them at our last activity. They were a hit! I asked the girls to give me their opinions because I had never made Pumpkin Whoopie Pies before so I wanted to make any necessary tweaks. I filled them with a maple flavored cream cheese frosting. One of the girls told me that maybe I should go lighter on the maple next time, so if you decide to fill yours with a maple flavored filling, there is a good tip. There are a multitude of fillings you could use! A plain vanilla whipped filling, a buttercream, marshmallow frosting, cinnamon flavored...The skies the limit! Not scrimping on the filling is a must! I piped mine in with a piping bag. It was fast and easy to do and gave the whoopie pies a generous layer of filling. Luckily, this recipe makes a generous baker's dozen, and possibly even 14. How lovely you have your own home-grown pumpkins, Helen! These whoopee pies look amazing. I really like the idea of maple filling. Pumpkin and maple are such a lovely combination.
