Recipes for a Fondue Party!

     Last night my husband and I went to my youngest son's house to have dinner with his wife and baby.  We had a Fondue Dinner!  It was delicious and fun!  It brought back memories of fondue parties when we were younger and more of a trend than they seem to be now.  And then I remembered that we are going on vacation with some friends this summer to their timeshare and the last time we got together we talked about doing a fondue night for dinner there as well!   So, since I came home with some leftover dippers, I decided that it is the perfect time to give a few fondue recipes a try!  
     First of all, I decided to start with something that I could make with what I already had in my house.  I looked at a bunch of cheese fondue variations and then I made up my own concoction with what I found and I've gotta say that it tastes pretty amazing!  Here is what I found and why I used it:
  • I always have shredded cheese in my freezer.  I decided to do a mostly cheddar based fondue this time.  I also found one package of grated cheddar blended with gouda and asiago cheese, plus a couple of packages of plain sharp cheddar, so I went with those in this recipe. 
  • Beef broth to replace wine.  If you don't have beef broth, use water and bouillon.  You could also do chicken instead of beef.
  • Whole milk
  • lemon juice-I've read that this is supposed to help the cheese not to separate, plus adds a bit of brightness
  • corn starch-to thicken and help with the not separating thing as well
  • garlic because it is garlic
  • dry mustard to add a bit of flavor
  • Worcestershire Sauce, a little more flavor
     Last night, I left my fondue pot (similar at this link) at my son's house so that they could finish off the fondue, so today I am making my fondue in my crock pot.  You can use either/or, but this recipe does serve about 10 people, so you could make it in the crock pot and then transfer it half at a time to your fondue pot for a party. 
     I did have trouble getting my fondue to become smooth with all of the liquid mixed in.  It still tasted great and no one seemed to mind.  But, I need to practice my technique better.  I used the cornstarch and the lemon juice, but rather than mix my cornstarch into the liquid, next time I am going to try tossing it with the cheese.  Here are a few other tips that I've read that I will try next time:
  • Make sure that the cheese is a high quality
  • Bring the broth to a simmer before slowly adding the cheese
  • Don't use pre-grated cheese, grate the cheese yourself

  • Crab Fondue from The Spruce Eats!  I think this one is already my first choice.  It's crab.

  • Butterscotch Fondue From Gemma's Bigger Bolder Baking
  • White Chocolate Fondue from All Recipes
  • S'mores Fondue from Rene's Kitchen Adventures

Here is  a list of dessert fondue dippers: 
  • Fruits like strawberries, apples, bananas and so forth
  • pound cake
  • angel food cake
  • vanilla wafers and other cookies
  • marshmallows
  • graham crackers
  • pretzels 
  • cookie dough balls
  • brownie bites
  • cheese cake sticks or cubes
    I can hardly wait to continue on this fondue adventure!  The melty cheese for dinner, the ooey gooey chocolate dessert.  Did I mention that the chicken and sausage that my DIL had as dippers for our Sunday Night Fondue Dinner were so perfect in her cheese fondue.  I can't believe that I haven't been eating this stuff more often! I picked up a fondue pot last month at our local SPCA thrift store and I keep forgetting to pull it out and make something with it. I really need to do that!

I only recently started using cornstarch as a thickener. I've usually used flour. I have found that cornstarch blends best if a) the liquid is cold and b) I add part of the cold liquid TO the cornstarch (instead of putting the cornstarch into the liquid) and whisking it madly before adding the rest of the liquid. And I always add cheese slowly to the hot liquid and then mix it smooth before adding more.
