Lindsey here, back with one final pumpkin cookie recipe to add to your fall cookie repertoire.
When fall hits I get free reign on pumpkiny goodness and all I want to do is add pumpkin to everything I make. I thought a fall sugar cookie would be fun to make. I found these super cute fall cookie cutters on Amazon. Of course, if I am going to make pumpkin sugar cookies, I need to make them PUMPKIN sugar cookies! I found this great recipe for pumpkin sugar cookies on The Mommy Mouse Clubhouse. The dough is tasty, the pumpkin sugar cookie comes out soft and sweet, with a great pumpkin taste. Also, you can freeze the dough and save it for later if you don't want to make too many at once!
I got my cute little baker involved. She LOVED rolling out the dough and using the cookie cutters to make all of the fun fall shapes!
These pumpkin sugar cookies would be great for a Thanksgiving treat if you cut out pumpkins, turkeys, fall leaves, and footballs! (We also have a squirrel one!)
After baking them and letting them cool I used the royal icing recipe below to make frosting to decorate them. I only did orange at the time because I didn't end up frosting them until the end of the day and I was tired. But doing different colors on the leaves would be fun!
I also have some fun fall sprinkles in the shape of leaves that would be really fun to put on the cookies to decorate them. I am definitely going to make these again and we'll have a fun fall pumpkin sugar cookie decorating party!

Since it's October I thought I would share a fun and easy decoration to make for your home. Your kids or grandkids might enjoy doing this with you as well.
Since we're doing Halloween at home I wanted to make it extra fun with our decorations. I decided to show my kids how to make those little garlands where it looks like all the people are holding hands, but with a Halloween twist!
My kids were so amazed and happy when I unfolded the garlands. They loved them!
So today I have a free subscriber printable of these stencils. I went with fun monster faces for these. They're simple to cut out and would be great practice for your young scissor users.I had my son (5) cut out the big outline and then I cut out the face details. He also traced the stencil onto the construction paper. I made these stencils to fit a regular sized piece of construction paper when folded into fourths. If your paper is a little different size than mine, no worries, just make sure that you don't cut the sides completely and your garland should still work.

In case you didn't know, my parents are currently living with us. They had a remodeling project in the house that turned into a much larger scale than they originally planned so while they have no bathrooms available to them they're sleeping at our house. They moved in last Thursday. It just so happened that Wednesday was my dad's last day of work ever! So, to celebrate I decided to make him his favorite cookies: oatmeal raisin. Then I thought, I can throw some pumpkin in those bad boys (I basically think this about every recipe. My rule with everyone is that when it is fall they aren't allowed to stop me from doing it.) Pumpkin Oatmeal Raisin cookies it is then! I set about to make them, but all the raisins we had were kind of dried and hard. I know you just said, "Uh... Lindsey... they're raisins. They're SUPPOSED to be dried out!" Yes, but raisins should still be a little plump and sweet. These were not that. I didn't feel like going out to buy more raisins. We have craisins in our pantry, but I don't really know how my dad feels about them, so I decided to do chocolate chips instead. That is how these pumpkin oatmeal chocolate chip cookies were born. He was still happy with the cookies. I know you're probably thinking these pumpkin oatmeal chocolate chip cookies are likely similar to the pumpkin chocolate chip cookies I blogged about last week, but they're really not! It's a totally different taste! Still delicious. You can't go wrong with pumpkin and chocolate chips really. You just can't. You could easily make this pumpkin oatmeal cookie recipe with raisins, or, to make it feel even MORE fall like, raisins and craisins! (Why do craisins feel like fall? Cranberry sauce at Thanksgiving I guess?) Anyway, these pumpkin oatmeal chocolate chip cookies are delicious and my dad loved them. You will love them too! |
