To say that it is hot here in Phoenix is an understatement! Look at this meme that my son posted the other day: That just about says it all! We are all about finding the things that make us cooler. We have spent a lot of time in the water already this Summer, and in between we are drinking as many cooling drinks as possible. We have shared a number of our cold beverage concoctions here on the blog in the past. Here are some favorites that you can click on to try out if you are suffering as much as we are! Years ago when my brother was a teenager, and I was much younger, he got a job at one of the first Orange Julius Shops that we had ever heard of in our town! (Although, they have been in business since the 1920s.) We loved those things, and still do. But, I think the recipe has changed since all of those years ago. The recipe that I've been making is more reminiscent of the original one that I remember so fondly! It is such a great way to get cooled off with a thirst quenching beverage! The ingredients are simple and you may already have them all on hand. My blender is so great at crushing up the ice cubes that the texture is perfect. (Right now, the price on Amazon is amazing!) The other night we were all feeling so hot! I asked, "Who wants an Orange Julius?" Everyone responded with a resounding yes! I whipped some up for everyone in the blender and I have to tell you that the coolness and bright flavor of this drink was just so wonderful and cooling that I am going to run out and pick up more frozen concentrate as soon as possible to make this our summer beverage of choice! More healthy than soda, cold and delicious, you can't go wrong. Let me know if you give it a try!

Thank you for your support. If you're like me you love fresh salsa. But it can be intimidating to know how much of everything needs to go in it. You don't want it too tomatoey or too spicy (unless you like that). So I experimented and came up with this recipe. It has been a favorite everytime I share it with others. It's for sure a game changer and you will love it. My recipe is based on the delicious fresh salsa my mom would make us growing up. And also based on watching my roommate Shirley make amazing salsas in college. She is of Mexican and Guatemalan heritage and always made the most delicious food. I don't claim that mine is authentic or anything like that, I just picked up some ideas from watching her methods. Easy Fresh SalsaI love salsa made from fresh ingredients and I include only one canned ingredient in this recipe: canned chipotle peppers in adobo sauce. It helps add a smokiness that I think is the key to its addictive flavor. It also is very easy to make because, after charring my veggies, I just chuck everything in the food processor and blend. I hope you give this recipe a try! I'm making some today to share with some people from church and I don't expect to take any home with me. Everyone knows that lemon and blueberries go great together when you are cooking. But aside from the taste, did you know that there are some tremendous health benefits that come from those two fruits? Here are a few of them: Lemons:
Blueberries:
(Source info from Healthline) Learning all of this about the benefits of these fruits inspired me to come up with this Blueberry/Lemonade drink to give my husband and I a boost as we were working on projects around our house! I had seen a recipe from my friend and Doterra consultant for a morning detox drink containing warm water, lemon oil and honey. It seemed like a great idea, but I didn't want a warm drink and I thought about the blueberries in my fridge and decided to make a Blueberry Lemonade using my lemon essential oils. It came out pretty good, but since then, I tweaked it and it is even better now. Drinking that cool and refreshing drink, knowing that everything in it was good for me felt so good after working hard all morning and gave me a boost for the rest of the day! Essential Oils I generally use essential oils topically and as aroma therapy. There are very few that I feel comfortable ingesting, but lemon is one that I trust. If you feel uncomfortable using the essential oil in this recipe, you can substitute the juice from one lemon and maybe some zest as well. Always store essential oils out of the reach of children. They are potent ingredients and need to be handled with care. Oils can burn skin and eyes and cause severe illness if ingested incorrectly. While I find oils to be a wonderful tool in my well being, it is important to learn about them and to know how to use them carefully. I am definitely not an expert but I value the expert advice that I have been learning from many sources. Always do your homework! So, here it is, my simple recipe for a Blueberry Lemonade De-Tox Refresher! Be sure to use a blender that is good at breaking up ice cubes! There you go! Super simple! Bottoms Up! *Just to be clear, Lemon essential oil comes from the skin of the lemon, so there will not be the added benefit of fiber in this smoothie when you use the essential oil. There will be if you use a regular lemon. Other ways I have used essential oils: Other healthy and delicious drinks and smoothies:

Some mornings you just want a delicious muffin, but when you think of all the work required and the time it takes you settle for your cereal again. Well I'm here to help because I have developed this recipe for a scrumptious and healthy muffin in a mug. This muffin is sugar free, gluten free and actually has two servings so you can share it with someone you love or save half for later.
Banana Oat 3-minute mug muffin
I was hesitant when I first tried this recipe because I'd never had a mug muffin before and I was basing my microwave version from a regular muffin recipe. But I'm happy to say it worked beautifully, and it was so easy. I think it would be easy enough for your kids to make themselves breakfast in the morning too. I also love that it is so fast, so even if you wake up late you can still have a delicious and nutritious breakfast. The chopped dates add the perfect amount of sweetness to the muffin and you can adjust the quantity to your liking.
I ground my own oat flour a couple weeks ago and used it for this recipe instead of all purpose. With the oat flour, the muffin tastes similar to bran muffins (which I love). The home ground oat flour makes this recipe gluten free! Grinding the flour was so easy with the grinder my parents got us for Christmas. I've used the oat flour in a few different recipes and I have loved it. If you don't have oat flour I think you could use all purpose flour and get a delicious muffin still, it probably won't have the bran like texture and flavor though.
I hope you can try this recipe and enjoy it like I have. I like to put some butter on my muffin right when it comes out of the microwave.
