Helen here, back from the beautiful state of Georgia where I was visiting and helping Alicia who had her third child who decided to make an early entrance to this world! He and his mom are doing great now. It was such a blessing, just 2 days before Easter, to have that tiny baby get to go home. I hope all of you had a blessed Easter and that you felt the Savior's love in your lives and the hope of the resurrection as we did this year. Because the baby was able to go home earlier than we thought, our plans to celebrate Easter with friends changed. So, my daughter's family and I had a smaller celebration than planned, but it was perfect. We quickly came up with a dinner menu and I drove off, GPS in hand, to the grocery store to gather the ingredients! The dinner was a delicious, delightful success! One of the dishes that my SIL prepared was my favorite of the day! It was this Potato Crab Salad that he remembers his mother preparing for his family throughout his childhood. It is so simple to prepare and fresh tasting. It was a great addition to our traditional dishes like ham and rolls. With ham, you want to have potatoes, but this was much easier to prepare than scalloped potatoes! If you are a seafood love like I am, you will love it. When I arrived back at home, I was still thinking about this salad and had to whip it up for my husband and I. After getting my SIL's recipe, I put it together with a couple of minor adjustments because if the ingredients that I had on hand.

Some of my grandchildren were here visiting and they told me that we just had to make Cloud Bread together. They had seen it on TikTok and that it looked like the most delicious thing ever! So, being a push over and wanting to eat the most delicious think ever, we decided to make it one Sunday afternoon.
The reality is that this bread is actually not bread at all, but egg whites that are stabilized with corn starch and baked in a loaf shape. It has a little sugar and can be flavored however you would like. My granddaughter flavored hers with vanilla and my grandson decided to try Root Beer flavoring! The result was a deep meringue like "bread" that almost had the taste of a flavored cotton candy!
The recipe calls for egg whites, so the perk was that the next day I used the yolks to make Butterscotch Crème Brulee! I may post that recipe later! It was so good!

Here in Phoenix, you can plant and harvest all year practically, except in the extreme heat of July and August when barely anything or anyone lives. Generally I get started on my garden in February, which is typically pushing it. This year, or actually last year, I decided to give my garden a go in November! I've meant to try planting in the Fall for years, but never did it. Now, I am never going back!

Funfetti is such a fun and festive choice for any occasion. My son and DIL had Funfetti cupcakes at their wedding reception! So, when I saw a bunch of posts about Funfetti Cookies online recently, and being the sprinkles lover that I am, I knew that I had to give them a try! They will add a festive addition to any Christmas cookie platter.
A couple of years ago, I shared a 3 ingredient cookie collection with you on this post. Cake mix cookies can be a life saver when you are in a hurry and need to take a plate of something somewhere. If you need some inspiration, be sure to check out that post to get some!
What makes these cookies even better is the addition of white chocolate Funfetti Chips! They have the same look as the cake mix, with the sprinkles in the chips! This is a good time of year to look for them in your local grocery store.
