3 different sources have let me know that today is both National Homemade Cookie Day and National Pumpkin Spice Day. So, with that information I thought we should celebrate with a post that will pretty much cover both holidays in a delicious way!
Last week, I actually already had National Pumpkin Spice Day covered with this free printable recipe for 3 Ingredient Pumpkin Chocolate Chip Cookies! Well, the spice came because of the Spice Cake Mix part of the recipe, but let's be real, those spices are probably the same as Pumpkin Pie Spice, cinnamon, ginger, cloves...You can still print that recipe if you go to this post.
Fill out Cookie Trays! During the holidays, I always enjoy giving away cookie and candy trays to friends and family. Of course I will include some of my beloved old favorite recipes, but these quick cookies will make filling those trays with something extra much quicker! And trust me, you really don't get a cake mix taste from these cookies at all!
After making those pumpkin cookies, I wondered what other combinations I could come up with to make other flavors using this simple idea. My son had the same idea and he made Banana/Chocolate Chip Cookies with a yellow cake mix and mashed banana. They tasted really great! So, I started brain storming and tried a few of the combinations that I had thought of. I've found some really delicious flavors and after collaborating with the girls, I can't wait to try more varieties! So, what I have done is create a folder for the Subscribers Page where I can add more recipes as I try them out, and you can access them if you subscribe to our blog.
Never fear though! Today I am sharing with everyone the first four additional 3 (or 4) ingredient cookies that we have come up with so far! If you would like to print the photo/recipe, just:
My first idea was Apple Butter/Salted Caramel Spice Cookies! They turned out really good with a nice tang from the apple butter! The salted caramel chips are a great foil to that tanginess. You can purchase your apple butter at the grocery store or use your own homemade! These cookies spread out better while baking than the pumpkin ones did, so there was no need to use a fork to push them down.
Maddy had the idea that a German Chocolate flavor with coconut would be delicious. She was correct! This is one of the recipes that actually has 4 ingredients because these cookies have caramel ice cream topping drizzled over them after they come out of the oven. I used coconut milk as the liquid component. I didn't put coconut in the cookie, but rather put a pinch on top of the dough before putting them in the oven. The coconut toasted perfectly as it baked!
Possibly one of my favorite combinations is the Lemon and White Chocolate version. My first idea was to use lemon curd, which I think I may still try, but my local grocer was all out of lemon curd and I didn't want to go to the trouble of making some for a cookie that was supposed to be quick and easy! So, instead I used Snack Pack lemon pudding cups! When I tasted the dough, (no eggs in this batter!), I was a little worried, but after baking them, they were so good! The edge was a little crunchy and the middle soft with the white chocolate chips! Another great thing about these 3 Ingredient Cookies is that they all come out looking a little different, so you really do get a wide variety of types of cookie!
Finally, I made a Hazelnut Chocolate Chip variety that came out so good, of course! They crinkled on top and were a combo of crunchy and chewy! These are 4 ingredient cookies because they use not only Nutella, but a few Tablespoons of coconut milk as well.
There you go! 5-3 Ingredient Cake Mix Cookie recipes! All different from one another and all delicious! They really do make a great tray all by themselves!
