I woke up this morning just a little under the weather. You know, sore throat, headache, really tired...and since there were no students today at my school, I decided to call in sick. I hate doing that, I am really conscientious about going to work and usually I will myself to be well, (as well as sending up multiple prayers that I just do not have time to be sick!) But, I actually called in sick this time and since it has still been chilly here in Phoenix, I decided that I would take a nice soak in the tub. Luckily I had these! That is right! They are Bath Bombs made by my daughter-in-law, Korina! I threw this kind in my tub this morning: It smelled so good and cleared my head! I felt so much better! Korina makes these bombs with essential oils. You will love them. Here is her contact information if you want to order some for yourself: [email protected] Since I was feeling better, I decided that I had better do something with the blueberries I had purchased a few days ago on sale. They were some really nice ones! I had thought that I would just can them or make blueberry jam. But since I am sick, I didn't want to put in that much effort. So, I just made some delicious blueberry muffins and then froze the rest for a latter time. Here are the baggies of berries. I put about a cup of blueberries in each bag because that is how many I put in a recipe of muffins. Here is my quick, delicious blueberry muffin recipe. Blueberry Muffins In a 2 quart mixing bowl, mix together the dry ingredients which include: 1 3/4 c. flour, 1/4 c. sugar, 3/4 tsp. salt, 2 3/4 tsp. baking powder. Melt 1/3 c. butter, add 3/4 c. milk and 1 egg. Mix these together by hand very well. Make a well in the dry ingredients and then pour the liquid into the well. Mix everything together by hand until all of the dry ingredients are mixed in. Fold 1 c. blueberries into the mix. I like to use my cookie scoop to fill the tins. I usually put about 1 1/2 scoops into a cup. You put them in a 400 degree oven for about 23 minutes. (preheat, I forgot to tell you.) They will come out looking like this. Hope you enjoy them! Now I am going to take a nap, and/or read a book. I am under the weather!
