Chocolate Covered Strawberry Bombs

       2022 was not a great year for our family and to top it all off, I didn't get very many Hot Cocoa Bombs made.  Happily, now that 2023 has begun, the weather has been a little more the way that it should be with rain and colder temperatures, so there is still time to enjoy some delicious Hot Cocoa Bombs to warm us all up!  Hot Cocoa is such great comfort food! (or drink!)  This particular flavor is one I came up with in 2017 and we made our first Hot Cocoa Bomb tutorial video about it!  Since chocolate covered strawberries make a great Valentine's Day treat, I thought that I would share this post with you again just as we get into February!  Enjoy!

          Today is the big day!  We are publishing our Hot Cocoa Bomb Video Tutorial!  It is available for your viewing pleasure right here on this site, or on Facebook or on YouTube! Take your pick and watch it over and over again if you want.  (I probably will!)  While the tutorial basics are the same as in our picture tutorial that you can find here,   this video also introduces a new flavor of Bomb that we are sure you will all love!  It is Chocolate Strawberry!  At Valentine's Day, one favorite gift is chocolate dipped strawberries, so we thought, why not a Chocolate Strawberry Bomb?  And look how pretty they are with the Wilton iridescent Valentines sprinkles  sitting in those cute cupcake cups. I found mine at Walmart, but there are similar ones here and here. These will definitely be making an appearance on our Valentine's Day breakfast table.  
        Without further ado, here is the video!
        The basics for creating these Strawberry Bombs are the same as you will find on this link, but here are the differences that make this flavor unique.
  • I purchased colored, fruit flavored marshmallows and picked out the strawberry flavored pink ones to put in these Bombs! I am considering making my own marshmallows that are strawberry flavored to use in them.  I found this blog, (Somewhat Simple)  that tells how to do it!  She used real strawberries! That would really enhance the strawberry flavor, but my only concern is that with real fruit in them, the bombs won't keep as long as our normal bombs will keep in the refrigerator.  (They keep a really long time!)  But, if you know that you are going to drink them all right away, this could be really a nice idea! 
  • I used Strawberry Nesquik in conjunction with Chocolate Nesquik to flavor the bombs.  Go heavy on the Strawberry or the Chocolate will overpower it.  I would say heavier than I did in the video.
  • I didn't have any pink Candy Melts, so I mixed red  and white to get pink. So, if you have pink, your color may vary. But, really, they are yours so decorate them however you would like.

      For those of you who live in colder climates, Hot Cocoa Bombs are a great way to get cozy and warmed up on a cold winter's night.  For those of us in Phoenix, we have to hurry and take advantage of our cooler mornings and nights for just a little bit longer and get in our Hot Cocoa Bomb fix while we can!  Chocolate Strawberry, or Cherry Cordial are perfect for a cold Valentine's Day morning!  After you watch the marshmallows pop up to the top of the cup, add some more, or whipped cream and sprinkles to make them extra sweetl for this sweetheart of a day!

Banana cupcakes: Recipe with Both Weights and Measures

     Last week I told you about my new digital kitchen scale and how I am experimenting with which measuring technique works better for me.  I started out with Browned Butter Chocolate Chip Cookies and then I decided that my next try would be cupcakes.  I had some bananas that were getting quite ripe, so I decided on a recipe for Banana Cupcakes.  So far, I've made the weighed measurement ones, I will make the standard cup measurement recipe soon and let you know if there is any difference.  

     I am very happy with the way these cupcakes turned out.  They are lighter than muffins, which was my goal.  As they sat in my Tupperware over the next day of two, the banana in them became much more noticeable, which I loved.  Of course, if you have very many kids, they won't last long.  
     Be sure to use nice ripe bananas in your recipe for the sweetness and flavor! I topped mine with a vanilla buttercream frosting.   I did add a couple of Tablespoons of real butter to that recipe because I wanted a little of that real butter flavor with the banana flavor.

     I am a big fan of the Great British Baking Show.  If you've watched it, you will have noticed that the bakers create their recipes using digital kitchen scales.  It got me to wondering if there is a big difference in the results between the use of the scale compared to the standard way of measuring with cups and spoons.  So, I asked for a digital kitchen scale for Christmas and I got one!  (Thanks Maddy and Jacob!)  Now, my experimentation has begun, much to my husband's delight.

Make a journal
     Fancy journals that make you want to crack them open and write your inner most thoughts can be pricey.  If you are a prolific writer of journals, crafting your own journal might be a fun option.  
     My creative  granddaughter is always on board when it comes to doing a new craft or activity.  I had been toying with the idea of creating journals using inexpensive composition books for awhile and when I mentioned the idea to Jayda, she was all in!
