Cherry Danish Breakfast Casserole

Cherry Danish Breakfast Casserole
     This is a decadent breakfast casserole that is perfect for a New Year's Day morning or to tuck away and save for Valentines Day!

      A Cherry Danish Casserole is perfect to eat this time of year because besides being delicious, it will use up any left over, day old rolls that you have after the holidays.  The colors are festive and the flavors are bright and cheery.  Best of all, you make it the night before, so in the morning you simply pop it in the oven and heat up your house while it bakes.  Then, simply mix up the simple cherry glaze and pour it over the top when it comes out of the oven.

It already looks wonderful without the glaze when it comes out of the oven.
     Those white cubes are chunks of cream cheese! If you are thinking YUM, you are correct! 

     I you don't want to pour on the glaze, you could make it a dipping sauce.  Other alternatives to the glaze are:
  • maple syrup
  • Sprinkle on powdered sugar
  • whipped cream
  • Chocolate sauce
I loved enhancing the flavor of the cherries with the glaze. It added to the ooey gooey goodness of the Cherry Danish appeal.

      At our house, we served this casserole on Christmas morning.  I'm sure that it will be making a reappearance in the near future.  We served it with bacon and hot orange punch.  It was very
Christmasy and  was a hit with everyone! The bread soaked in the egg becomes a unctuous custard.   
 
        If you don't have left over dinner rolls, you can use croissants, which was how the original recipe I saw on DinnerthenDessert made it, or you can use another crusty bread.  I didn't have any croissants laying around, but I did have rolls and decided to try it.  I made the recipe larger to accommodate a larger family and used more cherries!  I also added the cherry glaze with the removed cherry sauce.

     It is hard to believe that we have been blogging since 2014!  It all started with a single idea that we wanted to promote, The Original Hot Cocoa Bomb.  I know, I know, you've heard that others came up with the idea first, but that is water under the bridge now.  But, that idea is what propelled this 9 year project.

  1. Outdoor Rock Tic Tac Toe - This one surprised me because it isn't an original idea.  It is an idea I've seen numerous times and have wanted to make for my grandkids.  I painted my rocks to look like bees and ladybugs.  It was such a fun project! 
  2. Apple Scrap Jelly- I am very proud of my apple canning this year because I was able to  use every bit of those apples in juice, applesauce and this delicious jelly! 
  3. Inspirational Coasters- I loved this idea of putting conference quotes to remember on coasters to keep them in my mind so much that I published another popular post with new quotes here. Many of you loved these as well! 
  4. Unusual Nativities- Many of you collect nativities, and I love them as well.  I put together this collection of unusual ones available from different sources that we affiliate with. 

  5. Cornucopia Thanksgiving Favors-  These little cornucopias were fun to make and have on the table this past Thanksgiving! Some of my grandkids had fun helping me make them!

Salmon Shrimp Bisque

Salmon Shrimp Bisque
     One tradition that we have for Christmas Eve is to keep our meal simple.  We generally have a couple of kinds of soup.  I shared a post about this here.  Soup is such a warm hug type of food, or comfort food in other words.  

       Recently we had a women's Christmas Dinner and Program at our church.  I am on the planning committee for these activities and our committee decided to have a buffet of soups for the dinner.  If you haven't ever been to a soup buffet, I also wrote a post about that on this post.   We had about 9 different kinds of delicious soup and the night was wonderful! 

       My contribution to the buffer that night was two kinds of soup.  One was the ever popular Taco Soup, with toppings of tortilla chips, sour cream and cheese.  The other was this Salmon Shrimp Bisque that I came up with as an alternative to the much more expensive Lobster Bisque. 

        Whenever I come up with a new recipe and try it on people, I am always a nervous wreck.  What a relief when I discovered that this soup was practically all gone by the end of the night! Whew! 

        I actually made this soup in my Instant Pot.  I was able to sauté the veggies in it and then after everything was mixed together, I used the Instant Pot as a Crock Pot to simmer the soup in until it was time to serve it!  One pot equals less mess and I love that.  Not only that, with the lid on the Instant Pot, transporting the soup was an easy task. No spills! 

      If you don't have an Instant Pot, you can always use your Crock Pot and simply start the vegetables in a skillet on the stove. 

     I haven't decided if I'm going to make the switch from clam chowder this year and go with this bisque or stick with tradition.  My son is also doing a duck for Christmas Eve this year, so things are going to be a bit different than the norm.  That's okay though, as long as we keep the reason for the season in mind and spend it with as many loved ones as we can,  I know that it will be a great Christmas.

     Mixes in a jar are great gifts during the holidays and I've shared a number of recipes for them lately, which I will list below.  I got to thinking about all of the recipes and realized that my SIL, who eats gluten-free,  wouldn't be able to enjoy any of those recipes.  So, I decided to come up with a way to put his favorite gluten-free treat into a jar so that he and people like him can enjoy a special edible gift just like everyone else!
