Did you know that tomorrow is National Home Made Soup day? In the winter soup is a wonderful meal to whip up for dinner, or any other meal really!
If you live where we live you'll know we had winter last week and now it seems we're kind of in spring mode (I want the rain to come back!) However, in most parts of the country it is still cold, perfect soup weather! No matter where you live, we have a roundup of some of our favorite soup recipes from the blog for you to use! Choose any one of these soup recipes for your National Home Made Soup day dinner (or soup day lunch, or soup day breakfast!) First up is this delicious Vegetable and Ham Bisque my mom made. You can buy the cute pumpkin tureen if you want, but the soup will taste delicious no matter what! All those yummy veggies and ham hocks sound so perfect for a cold winter's day! If you're really in a ham mood, you could also try this Ham and Cheese Broccoli Soup! This soup is simple to make, and so delicious. Doesn't ham and broccoli sound like the perfect soup combination? Sometimes there is nothing like Chicken Noodle Soup. This recipe I shared with you is a pretty darn good chicken noodle soup recipe, if I do say so myself! Or, if you want something with a Mexican food flair, you can try my Chicken Taco Soup! This just might be the recipe I go with for dinner tomorrow because chicken tacos as a soup is really one of the best things to ever happen. Or... I might try this Pumpkin Sausage Soup! You know I can't resist a good pumpkin anything, and that definitely includes a pumpkin soup! My mom made this pumpkin sausage soup and it is also a great option for those of you following a Keto diet! If you're a big curry fan (like me!) then you could go with this delicious Coconut Curry Soup! The curry really gives this soup a depth of flavor that can't be beat on a cold winter's day! You could also go international with this delicious Ecuadorian Encebollado Soup Alicia made for you! Alicia said they come home with cans of it every time they go visit Ecuador, but here she made it from scratch so you could try it too! Sticking with international we'll round out this roundup with this delicious Irish Stew! Stew is perfect on a cold winter's day, and just look at the picture of this Irish stew! If that alone doesn't make your mouth water for it then... maybe you aren't feeling well and some soup would be really good for you! Well, that is our soup roundup! A couple years ago, I showed you how I made this Daniel Tiger birthday cake for my daughter's first birthday. That has been one of our most popular posts, so I thought today I'd show you what I did for her third birthday party! She has been adamant for a few months that she wanted an elephant birthday party. So I set about figuring out what one does for an elephant party. I am going to show you the cake I made and give you the recipe for it. I also want to tell you about the games we played. First, a word on decorations. I went with easy and got grey balloons and plates. I got small clear sparkling cups for drinking. Now, on to games! Creating a twist on the classic pin the tail on the donkey game is always fun and easy to do for a kids birthday party. Since this was an elephant birthday party, of course I had to make a pin the trunk on the elephant! I'll be uploading a copy of this to our subscribers only page this weekend, so you can print it and have a pin the trunk on the elephant game for your own elephant party! So make sure you subscribe to get a copy of it! Of course, all the rules to this game are the same. This is a picture of her cousin after he pinned his trunk perfectly (we think there may have been some fraud involved). It is a fun game for all ages! The second game we played was one my MIL came up with. She ran to the store and found a bag of unshelled peanuts (no small feat in December when they aren't in high demand.) She and Emily hid them around her yard. Then when her cousins came over they went on a peanut hunt. All of her cousins at the party were her bigger cousins, so they let the 3 year old birthday girl win. But a hunt is a fun activity when the weather is nice. It'll help the kids work up a nice appetite for the elephant cake you'll eat later! A few other fun ideas for elephant party activities are making elephant masks for the kids to wear, like these here. I was pretty happy with how this cake turned out. Drawing is not my forte, everyone else on this blog is much better at it than I am. Fortunately, an elephant head is a pretty simple shape to duplicate! So, if you're like me and think you can't draw well AT ALL (honestly people, my stick figures don't usually turn out right) I am here to tell you, you CAN make this elephant cake! You can see from the picture the eyes are a little uneven and the trunk isn't perfect. Guess what, it's your kid's birthday party so, it's okay! Emily loved her elephant cake, and that is what mattered. I even drew these little elephants on the side. They weren't perfect either, but they still looked like little elephants. I am really happy with the overall look of this cake, and you will be too! The recipe I'm sharing with you is my go to recipe for chocolate cake. It comes from the back of the Hershey's Cocoa box. It is such a moist, delicious chocolate cake! It also holds up well for stacking! There you have it. A simple formula for a fun elephant birthday party.

It's Lindsey, and I'm back with another French recipe for the sixth day of Christmas, a quiche for Six Geese a Laying! Now of course, the song says six geese a laying, but don't worry, this recipe calls for regular chicken eggs.
Obviously, while I was living in France I ate a lot of quiche. Quiche is such a quick and simple meal, and you can spruce it up any way you like! This quiche recipe is very basic and just calls for spinach, but you could easily add anything else you'd like to it. For example, it would be very easy for you to chop up some onion and toss it in to this quiche recipe. Or you could fry up some bacon and chop it up and sprinkle it into the filling once it is in the crust. You could also slice up zucchini and place them on the bottom of the crust and pour the egg filling over the top for a nice Quiche Courgette (courgette is the French word for zucchini.) A word on the crust. When I was in France you could pie pre-made crusts and would be labeled pate brisee or pate feuillette. Pate brisee is what they use for quiche. As I did some research into how you make pate brisee, I realized it was very similar to our basic pie crust. They usually make it with butter, but as you know, we make our pie crust with shortening and it works just as well. So here it is, my basic French Quiche recipe, you are going to love it!

On the third day of Christmas my true love gave to me: Three French Hens, and so I made a pot of coq au vin!
Here is your language lesson for the day. Coq is actually the French word for rooster. Coq au vin directly translates as "rooster in wine." But it is hard to find a rooster to cook these days, so really any chicken will do. However, for our 12 days of Christmas recipes, the third day calls for Three French Hens, so I knew we would have to make a French dish, and Coq au Vin is just perfect for the season! It is warm and comforting. You serve this Instant Pot Coq au Vin atop a bed of mashed potatoes. Does anything sound more wonderful on a cold winter day? When I was tasked with doing a coq au vin recipe I knew I wanted to use my Instant Pot! I got it as a gift from my husband for my birthday, and I love it! Not only does everything cook faster in an Instant Pot, but it really cuts down on dishes! For this Instant Pot Coq au Vin you use the saute function and the pressure cook function.
A word on the wine used. We are not wine drinkers in this house. Or alcohol drinkers at all. Red wine is a central feature of coq au vin (remember vin= wine) but I didn't want to buy an expensive bottle of wine for one dish. I used Holland House Red cooking wine which is much less expensive. You could also use grape juice if you really don't want to use alcohol at all (the alcohol cooks out, but you do you. No judgement here!) then grape juice would work, but it is probably a little sweeter so you would likely want to adjust your grape juice/chicken broth ratio so your coq au vin sauce won't be too sweet.
