All of this was spurred by a desire to create some treats that do not use refined sugar. Well, I've done some research about why this might be beneficial to the human body and I've learned some interesting things.
Not only that, but I've discovered a great way to make cupcakes without refined sugar, including the frosting, which if you ask me, is quite the amazing feat! So, read on!

When I was in Georgia, a good friend of my SIL came over to visit. We discovered that we both have Danish heritage and are interested in recipes from that country. He told me about this Danish Dream Cake that he has learned to bake and he texted me the recipe so that I could try it for myself! I was finally able to bake it the other day and first of all, I was amazed at how simple it is to make! Secondly, that caramel, coconut topping is so good that I could have eaten the entire panful with a spoon immediately! (If I didn't have such wonderful self control, Ha Ha!) And one more thing is that the cake itself is very light and spongey. It is no wonder that this is such a popular cake in Denmark! I tweaked the recipe just a bit after researching it more, so today I am sharing the recipe that I used, adapted from Skylar's recipe. Thank you Skylar! The backstory of this cake is that in the 1960s, a young girl entered her grandmother's recipe into a national baking contest and she won! The cake has been popular in Denmark ever since. I can't help but wonder where her grandmother got the recipe, but I haven't found out that tidbit anywhere. I mean, coconut seems like an unusual ingredient for Denmark, doesn't it? Well, whatever the rest of the story is, this is one great tasting cake. Here are a few tips when baking this cake:

For Father's Day, my granddaughter was excited to make her dad and grandpa a cake! She chose a Dolly Parton Style Coconut Cake Mix that I had in my cupboard and whipped that up as a 2 layer round cake. I had seen a cake online that was decorated to look like a campfire. Since her dad and my husband both love camping, I suggested that might me a great way to decorate the cake. She was all in! If you decide to make this cake, of course you can do it in any flavor you like.

Okay, first I have to tell you that I forgot to take some really good pics of these cupcakes before taking them to the baby shower that we threw for my extra daughter Charly. These were the practice ones. Do you see the liners in the back that are blue with polka dots? Those are the ones I used. Charly and her husband are not finding out the gender of their baby until she gives birth, so we wanted a very neutral theme for her shower. Charly loved the Rubber Duck idea, so I looked on Pinterest of course and found this idea from Sweets & Treats. I hadn't heard of their company before this, but I fell in love with theirs large variety of sprinkle mixes and their cupcake liners keep such bright color after baking in them! I definitely recommend checking them out. They have some great items on their sale page as well! You know I love sprinkles and I can definitely use some new ones when Hot Cocoa Bomb Season begins! To decorate the cupcakes, I simply used a large circle piping tip to dot on frosting to look like bubbles. I enhanced the bubble look with large and small round candy sprinkles. Finally, I popped these rubber duckies on top! They were the perfect size for the top of the cupcakes. These rubber ducky cupcakes were definitely a hit and a centerpiece at the party. I love when treats are easy to make and pack a big punch! |
