My daughter from another mother, Charly, is very good at giving her son a very healthy diet. She doesn't give him refined sugars. So, when he comes to visit me, I try to find snacks to give him that fit into that diet. It is acceptable to give him honey! So, today I came up with a recipe for these Honey Oatmeal Raisin Cookies that really hit the spot when you want a sweet, comforting snack. This recipe only calls for 1/2 cup of honey. You could add a bit more if you want it to be a little sweeter, or another tablespoon of molasses. I used a tablespoon of molasses to give that brown sugar taste to the recipe, so actually I think that another spoonful of it would be perfect! There is only 3 Tablespoons of butter in this recipe. I didn't brown it this time, but I might next time because browning the butter gives so much depth of flavor! After I made these, I realized that I hadn't put any cinnamon in them! They tasted good without it, but I believe they would taste so much better with it, so I added it to the recipe now. If you don't like cinnamon, you can leave it out, but I will definitely be putting it in! On the recipe, I explain how to rehydrate your raisins. Doing this makes the raisins so much more tender and juicy in the cookie and adds to the overall sweetness. If you don't like raisins, you could use dried cranberries or dried apples and rehydrate them. (I explain how to rehydrate dehydrated apples in this post.) These cookies tend to stay a bit rounder when you pull them out of the oven. I always tap the pan on the counter a couple of times to help flatten them a bit when I take them out. These cookies are simple, with the perfect sweetness that made 18 month old Logan want to keep one in his pocket for later! They are a great healthy alternative to a sugary snack.
