Honey Sweetened Ice Cream

     We are having 90 degree weather already in Phoenix, so playing with my new Kitchen Aid Ice Cream attachment has been wonderful!  (But, I stood on the scale this morning and I am going to need to limit myself to how much I am making and eating!)  
        Last week I posted about making honey sweetened oatmeal cookies.  They were a big hit around here!  That recipe go me to thinking that I should look for ice cream recipes made with honey.  Of course I found some! 
      I really like honey, but honey does have a strong flavor that can be overpowering at times.  I was worried that this ice cream would be too sweet with too strong of a honey flavor.  My fears were all for naught because the honey flavor is light and delicate in this creamy, smooth ice cream!

A Couple of Tips for Making Honey Sweetened Ice Cream!
  • Warming the honey briefly in the microwave allows it to blend with the milk and cream much more easily.  I was worried that the honey would crystalize when it got cold, but it did not! 
  • A bit of salt in the recipe does a world of good, trust me! 
  • Use a good vanilla to balance out the honey flavor.
  • Make sure that your machine is turning when you pour in the ice cream mixture.
  • This ice cream tends to be a bit softer than other ice creams I have made, but still soft enough to scoop.  After freezing it for awhile, it still was soft and easy to scoop.

This was taken right after it was churned. It hardens up a bit when frozen for a couple of hours.
     I adapted the recipe I used for use in my Kitchen Aid machine from In The Kitchen With Kath.  If you don't have a Kitchen Aid attachment yet, you can use whatever ice cream maker you have.  But really, the Kitchen Aid attachment is awesome.  Unfortunately the sale is over, but watch for it!  I'm sure it will go on sale again! Or splurge now, because you will want it for the summer!
