Making Ice Cream in a Kitchen Aid Ice Cream Attachment!

Homemade Ice Cream in Kitchen Aid
      I have a new attachment for my Kitchen Aid that I am loving!  I discovered how much I wanted this thing when I was visiting Alicia at her new home in Georgia.  It is an ​Ice Cream Maker Attachment!  This thing is mind blowingly amazing and fun and easy to use and I could just go on and on! 

     I had given Alicia an Amazon gift card for her birthday last year and purchasing the Ice Cream Maker attachment is how she used it.  I had never thought about getting it before, but when I was at her house and her husband made us ice cream a few times, I was hooked and knew that I had to have one for my Kitchen Aid. The problem was that it cost $100!  I mentioned this to my new DIL and within a few days, she sent me a link showing that Amazon had the ice cream attachment on sale, 30% off!  This deal is for a limited time so I didn't wait! I had my new ice cream maker within a couple of days!  I just checked and the deal is still going, so you can get one, too! 
What is Great About the Ice Cream Attachment?
  • The ice cream attachment is great because it only takes 20 minutes to make soft serve ice cream.  Then, if you freeze it for awhile, it becomes firmer for scooping.  
  • The bowl is nice and deep and makes a full half gallon of ice cream.
  • The directions to use the bowl are clear and simple.  One size fits all, except for a couple of models of Kitchen Aid, so be sure to check before buying.
  • The attachment comes with a cooked base recipe, but you can use any recipe you would like and stir in whatever flavors and add-ins that you would like to make a wide variety of ice creams.  (So far I've made Cookies and Cream and Strawberry!  I'll share how farther down in this post.)
  • We can have ice cream whenever we want! This summer will be amazing!

Tips for Using the Attachment:
  • There is a heavy duty plastic paddle that hooks to your Kitchen Aid with another piece that is heavy duty plastic and metal.  You simply push the smaller piece onto the Kitchen Aid

This piece slides on from the back towards the metal piece where you usually attach your beaters. It grips pretty tightly.
  • When that first piece is attached, make sure your ice cream bowl is attached securely where the bowl normally goes.  Place the paddle inside of it and lower the head of the mixer so that this new attachment fits into the top of the paddle. Like this:

It just sits in the paddle without needing to be tightened. It works very simply.
  • Freeze the bowl for at least 16 hours before using it.  I am just going to have a dedicated space for my bowl in the freezer so that I can pull it out and make ice cream whenever I want to! 
  • Make your ice cream base and then start the machine turning before pouring the base into the bowl! That is very important! The mixture will freeze up and not allow the paddle to turn if you pour the mixture in with out the paddle already moving. 
  • The speed of the paddle should be "stir," the very first setting. 
  • After the ice cream is starting to get thick, in about 20 minutes, you can add in your stir-ins.  I have found it easier to  take my soft set vanilla ice cream out of the freezer bowl and into another larger bowl and then stir in my add ins.  Or, put some in while it is churning and add the rest by stirring it in after you transfer the ice cream to a different container. 
  • Never leave your ice cream in the ice cream churner attachment because scooping out hard ice cream could damage your bowl.  
  • Don't wash your ice cream churning bowl in the dishwasher, always hand wash it.  You may wash the paddle and other piece in the dishwasher though.

Recipes:
     As I said, the Ice Cream Attachment comes with a recipe for a cooked, custard style base.  I haven't tried it yet because the one I got from Alicia is so much quicker, easier and it tastes delicious.  Here is the basic recipe that you can add all sorts of flavors to:

     Here is how I've made the two flavors that we've enjoyed so far! 
​    For Strawberry Ice Cream,  I've found that using the freeze dried strawberries is the best way to get the strawberry flavor into food.  The ice cream rehydrates the little chunks as the ice cream freezes.  You could stir in a few fresh berries or strawberry jam at the end of the process to boost the strawberry flavor.

*One thing that I also wanted to mention about making homemade ice cream is that when Alicia and her family moved to Georgia, some people at church brought them some homemade ice cream to welcome them!  I loved that idea and now I can do that for people myself!  What a fun treat to receive!
