While it was a lot of fun showing you a bunch of our favorite things, I decided that after nearly 2 years, it was time to change things up! So, SURPRISE! Even my daughters don't know that I've made this executive decision! But, welcome to Fun Friday! Since our Friday post carries you through the weekend, where most of the fun is usually had, we will be sharing all kinds of fun ideas on Friday, from activities, to parties, from treats to places to eat out. The boundaries of our imaginations will be the limits on this Friday feature! So, let's have some fun! Since summer is about here, I decided to share with you something that I love and that represents fun to me! Root Beer Floats! It must be the time of year for making and enjoying them because I have already had them at 3 events this spring so far. One thing I have noticed about root beer floats is that sometimes they are served in a glass with a whole bunch of foam and some ice cream, without anything to sip really. In other words, the ice cream isn't "floating" in the root beer. I have found that this happens because of two reasons. 1-The ice cream was put into the glass first, without root beer. 2-The root beer was not chilled. I have developed a technique for making homemade root beer floats that solves the problem of the foamy, no liquid float. First, you need to gather your equipment and ingredients:
Just click on the pictures for the directions: Now, the ice cream will be "floating" in the root beer and there will be a reason to have a spoon and a straw! When you get to the bottom, there will be creamy, root beer flavored goodness!

She lives near Lake Superior on the Upper Peninsula of Michigan, and she and her husband escape the terrible snowy weather there in the winter by coming back to AZ for a few months every year. When she does, we have a standing breakfast/lunch date at Mimi's Cafe. Last Friday, we met there at 12:30 and left around 5:00. I'm sure that the wait staff loved us! Ha Ha! A nice thing about Mimi's is that they serve delicious food with a French flair and you can get breakfast all day long if you like. This time I ordered their 3 Egg Smoked Salmon Omelette. It seemed like it could stand up as lunch fare, even though it was in the breakfast section of the menu, and it did not disappoint. Since Salmon is one of my most favorite foods ever, it was a no brainer that I would order that omelette when I saw it on the menu! The next day, I couldn't get that salmon omelette off my mind, so I decided to see If I could make my own version of it for dinner that night for my husband and I. My version also did not disappoint! The only thing I had to go to the store to pick up was the smoked salmon. I used this brand... ...but there are many varieties out there. I liked that it is deli sliced because I was able to lay a nice layer of salmon evenly into the omelette. Also, the secret ingredient in this recipe is Parmesan Cheese that adds that little salty boost to the eggs. I know that many people are against using cheese with fish, but I find that Parmesan and salmon go together very well! Give it a try! Now, here are a few omelette making tips:
This recipe is great for breakfast, lunch or dinner! The smokey salmon flavor was so delicious yet subtle combined with the other ingredients! At Mimi's, they served it with a muffin! I always love to read books that describe how people survive in difficult situations. I am amazed at stories from England during WWII. The people came up with resourceful ways to survive against devastating circumstances. Those survival and preparation ideas stay with me as I think of how I would try to survive in difficult situations. Today, for What to Read Wednesday, I am suggesting a Young Adult Series that begins with this book, Life As We Knew It, by Susan Beth Pfeffer. I first read it a number of years ago, Maddy suggested it to me after she read it for a school assignment. It is one of those books that has stayed with me and I think of it often.
It is a science fiction novel that seems very feasible at the same time. Written in the form of a diary, a teenage girl named Miranda describes the events that happen when a huge asteroid strikes the moon and knocks it out of orbit, closer to Earth. This causes many cataclysmic events to happen on earth and those who live must find a way to survive. Not only do the characters find ways to survive, this book also points out situations that could arrive In the event of a major catastrophe that I hadn't considered. It was a book I couldn't put down. Miranda's family lived in Pennsylvania, away from the ocean where other horrific events were happening. The next book in the series, entitled The Dead and the Gone is set in NYC. It is the story of a young man named Alex and his two sisters. Their parents disappeared after the devastating tidal waves and floods began after the asteroid struck the moon. The story is sad, yet intriguing.
There are two more books in the series. Only the first one is written in the form of a diary. But, they all deal with the same two families dealing with hunger, disease, natural disasters, death and how to survive. They miraculously end up connecting with one another. The twists and turns are interesting, but the way the problems are dealt with are what captured my attention.

Happy Monday everyone! It is an especially happy one for me because PH's work schedule changed so now he'll get home earlier in the day. Which means we can start having the regular family dinners I've always dreamed of having!! Hooray!!
Speaking of family dinner, yesterday was the first Sunday of the month, so we did our family dinner as part of our Come Follow Me monthly family home evenings.
It was our month to host. Yesterday was May 5th, Cinco de Mayo, so we obviously had....
Lasagna! Yes, I kind of dropped the ball on the whole Cinco De Mayo thing, but everyone likes lasagna and it's easy to make, so I went with that! Well as you know, there is our dear Maddy who is vegan. I decided I'd try my hand at making a vegan lasagna that got her approval. Well, first step was to make my own vegan cashew ricotta "cheese" to use in the lasagna. It was so easy to make vegan cashew ricotta cheese you guys! So, this week, I am going to tell you how to make this vegan cashew ricotta cheese which Maddy told me tastes just like the real thing. Then you'll have to come back next week to get my vegan lasagna recipe! In order to make this Vegan Cashew Ricotta Cheese you'll need the following kitchen supplies: Food Processor: I like this one made by Hamilton Beach I also have this fun little immersion blender with a food processor attachment. I love it for onion chopping! It is so fast and easy! That is basically it!

If the cheese is too stiff or crumbly, add more broth, one tablespoon at a time. Mix between each tablespoon until desired consistency is reached.
And that's it guys! this made a lot. Even after I made Maddy her own personal lasagna I sent her home with extra vegan cashew ricotta cheese to use in other recipes this week!
