Last week I shared our family's favorite Salsa recipe. That got me thinking about the first time a friend brought me a jar of her fresh salsa and how it inspired me to start making my own because it was just so good! If you have an abundance of tomatoes on your plants this year, you can make salsa until it is coming out of your ears, and what a great little gift to give to a friend or to bring to a game night! Of course, it is always fun to dress your gift up a little, so that is where these Salsa Gift Tags come in!
I haven't done a lot of water color painting, but I have wanted to give it a try, so feeling inspired by the vibrant colors of the salsa ingredients, I painted a little gift tag to use on my jars of salsa! These will print out on business size cards. All you have to do is punch a hole in the corner and tie them onto your jar. I used baker's twine that I purchased from Dollar Tree!
The salsa will get eaten in one sitting, most likely. But, just in case, tell them to keep it refrigerated and to eat it up within a day or two. Salsa at it's freshest is best!
Now, here is the file for you to print off your own cards! I used Avery business cards to print them, or you can just print them on card stock and cut them apart. I hope you enjoy them!

This chicken taco soup recipe happened because I didn't know what to make for dinner and I didn't want to go to the grocery store. I'm telling you, having food storage is so important. It can be really fun to figure out what you can eat simply from what you have in the house. The results can be magical. A Magical taco soup that your husband will rave about. I am always a fan of anything you can do in a Crock Pot, especially now with a five month old baby who doesn't always like when mommy is busy in the kitchen and doesn't have her attention 100% turned to the cute little rolly baby rolling all over the place. I can throw something in the Crock Pot and not think about it, and hours later have a tasty meal. Now, my mom has a recipe for taco soup that she uses that is a little different from this one. I wanted to try and come up with my own thing, because, options. Options are always good my friends. You could cook the chicken as the first part of the recipe calls for and then shred it for chicken tacos. That would be totally legit and delicious. If you're in the mood for tacos, without the tortilla, this chicken taco soup is the answer! So check your pantry and get to soup making!

Alicia back again with another Danish recipe for you. We're Danish from my mother's side of the family, though we never really had Danish food growing up. This is probably because our ancestors moved to the USA in the early 1700's. So it's been very fun and delicious to experiment with Danish recipes this past month.
This month has been more difficult than past months though due to Danish food not being particularly common in the United States. Most of my google searches turned up Æbleskiver and Smørrebrød. So I decided to buy a Danish cookbook. I bought the kindle version of Hygge - Danish Food and Recipes. It is a great little book filled with family anecdotes and family recipes from the author Sidsel Munkholm. (And if you have Amazon's Kindle Unlimited, it's included in your subscription!) She also has a useful index of the recipes with their english and Danish translations. Last week I made a Danish pork roast with crackling, Flæskesteg. It was a really easy recipe and very delicious! Actually, I made a few mistakes and it was still delicious! Flæskesteg - Danish Pork Roast with Crackling
Flæskesteg is a dish that takes about 3 hours to cook but literally only 10 min to prepare. The tricky part will be finding the right cut of pork. Usually here in the states pork is sold without the skin on. But for crackling, you need the skin. Flæskesteg is traditionally a pork loin with skin, but can also be a shoulder roast (both boneless). I was fortunate to find a shoulder roast with skin attached at my local grocery store butcher. It did have a bone, but it was off to one side and it was a 5lb roast. So I just cut my roast in half to make two 2.5lb roasts, one with a bone and one without. If you aren't able to be as lucky as me and find the cut you need, ask your local butcher if they can help you out. You'll want a roasting dish or a glassware that has sides. I have a Pyrex set that I love. It has a smaller, shallow, rectangle dish that is perfect for a small roast like this. I'll link to it below.
This recipe is so easy you may be wondering how I could mess it up. Well, I was out of kosher salt when I thought I had it. So I used my coarse Himalayan salt. But this was a mistake because it made the roast a little salty (you can see the clumps of salt in the picture below). Kosher salt is better for this recipe because it is flakier and will dissolve better. My second mistake was that I accidentally cut down to the meat instead of just before the meat. To get the crackling perfect, you cut grooves along the top where the skin is, but you don't want to cut the meat. Well, I did that. Next, I didn't have all my skin directly face up. This made it so one of my cracklings was not crunchy at all because it had soaked up the juices from the bottom of the pan. But despite all these failings, this roast turned out so delicious and juicy. My 3 year old son was even asking for seconds. And my husband was devouring it.
Traditionally in Denmark this is served with boiled potatoes or red cabbage, and a gravy is made from the drippings. I decided to make mashed golden potatoes to go with my pork gravy. They came out beautifully and paired well with the Flæskesteg.

This past weekend, we had our in-town kids and grandkids over for dinner and I made the first batch of the summer. The smell and the taste were perfect for the evening and everyone really chowed down on it. I decided to update this post from 2 years ago in case you missed it! Trust me, you don't want to miss it! Every year when I bite into a fresh tomato from my garden, after eating the supermarket ones all winter, the deliciousness is almost overwhelming. This year we put in heirloom, non-gmo tomatoes in the hopes that we can harvest our own seeds for next year. At first, we had to battle blossom-end rot. That is pretty much taken care of, but we have also noticed that one of our plants produces nice round tomatoes, and another produces really weird shapes. But, no matter what, they taste delicious. By the way, the best way to solve the blossom-end rot is to add calcium to your soil! We were having another family get together a couple of weekends ago and I had enough tomatoes to make some fresh salsa. Man, it is so good! I like making my own salsa because then I can make it to the lack of heat level that my husband and I like yet have a lot of flavor! Here is how I do it: If you don't have a garden, this salsa is still great with store bought tomatoes! And, it goes fast, so be prepared to make it again and again! I hope you enjoy it!
