This is a recipe I actually came up with after our road trip and before the weather turned hot. Since Lindsey is still suffering with a little bit of jet lag and wasn't up to Renny's Recipes today, I thought I would share one last cake recipe with you before ovens are tuned off for the summer. If your Memorial Day Weekend is taking on a Luau flair, this could be the perfect dessert for it.
When I came home from our trip, I found about 3 very ripe bananas waiting to be made into something. I decided that a bundt cake would be fun. To make it have a Polynesian attitude, I also added pineapple. Then, I decided to split it and add a pudding based frosting to the inside as well as on top. It turned out really well. Since Lindsey and Austin have been in France and Switzerland for almost 2 weeks now, they have been having a ton of fabulous food experiences! Here is a slide show of some of the photos they have sent:
I may not be in France, but I got to get in on the French food fun yesterday because my son needed some Pots de Creme for his AP French class party. What a simple yet extremely delicious recipe. I found the recipe on Food Network and tweaked it a little for my needs.
Pots de Creme are a very chocolaty custard pudding that are traditionally served in little pots. Thus, the word "Pots". Since my little pots needed to be disposable, I went to the Dollar Tree to see what I could find. I found these great little 4 oz. bowls that are actually the perfect size. They come 12 in a pack, which was precisely the amount I needed! So, $1.00 for all 12! You can order them online just 4 units of 12 at a time! They would be great for a wedding or bridal shower. And, if you need a lot, you can order them and have them sent directly to your Dollar Tree for free shipping! You can click on the link here or on the photo to order. I also picked up some plastic spoons. There are 48 spoons in a bag and you can order a minimum of 6 bags at a time. That is $6.00 for more spoons than you can shake a stick at! (or a spoon!)

So, if you are craving a French treat after seeing the food Lindsey and Austin are eating, here is something simple, sweet and delicious you can enjoy. I hope you do!
Today, I had a serious problem. I really wanted chocolate. And cookie dough. And cheesecake. And something a little salty. (I also wanted pie- but that problem will have to wait another day for a solution.) I know I'm not the only one who feels this way sometimes. Or all the time. And the solution seemed simple enough. Cookie Dough Cheesecake! Yum! Except, then I found out I had one more problem.
If you've ever made vegan cheesecake before, you know that most recipes require soaked cashews. I didn't have any of those because I eat a whole bag in three days. So, I messed around with the recipe so that there are no nuts required! Yay! The recipe is pretty much just like making regular cheesecake. I just made them cupcake sized because I wanted to eat them sooner. The recipe will work just the same if you decide to make it full size, it just may need to chill longer. Another option is to use canning lids like mini spring form pans like we did in this post. So the first step is to make your crust and fill the cupcake liners with it. Be sure to press the crust down evenly the whole way around.
Next, you will stick that in the freezer. While it's chilling, you can mix together the filling. You can find lots of vegan friendly chocolate chips. For a non dairy alternative to cream cheese, I used Daiya brand plain cream cheese spread. For non dairy milk, I used flax milk. (Flax milk is my new obsession. I think it's sooo good!) But, these are just my preferences and you can use whichever brands and products you prefer!
Once the filling is finished, it will be a little bit sticky and look almost whipped. I scooped it into each liner on top of the crust using a cookie scoop. There was about 1 tablespoon in each cup. Then I added some more chocolate on top. Stick that in the freezer for another couple hours.
After that is done firming up, they're ready to eat! I think these came out tasting so good, and they look so cute. They would be fun to have for a party or just if you want to control your portion sizes! (Just kidding, I ate like three of them.) This one batch made twelve mini cheesecakes. Yessirree! This is our Eagle Scout #3, who just passed his Eagle Board of Review! We are very proud of him. He has put in a lot of work throughout the years since he joined scouting as a Cub Scout. As a Boy Scout, he has completed 28 merit badges and he did a great service project for the Parks Service in Maricopa County, painting and cleaning ramadas, picnic tables and clearing trash and debris. I can't say enough good things about the BSA. They have helped to shape my boys into fine young men, along with our church teachings and fine leaders that have been in their lives. I am one proud mom.
Becoming an Eagle Scout is a major accomplishment. Only 3 or 4% boys who join Scouts achieves this award. It shows that they have learned responsibility, stick-to-itiveness, and many other leadership qualities. You may not realize that being an Eagle Scout is highly valued by businesses and even the government. When Eagle Scouts join the military, they are given one paygrade higher as an enlisted man. That means a little extra money! One of our sons was told when he was hired for a job that being a Eagle Scout is what made him stand out to his employer. Eagle Scouts are also eligible for College and Trade School Scholarships.
Jacob hasn't been awarded his Eagle yet. The box he is holding is just a prop. When he has his Court of Honor, then I will probably brag about him even more, so hold onto your hats.
In the meantime, having another Eagle Scout Son gives us something to celebrate! What is a celebration without a cake? Luckily, I have my new KitchenAid at the ready to whip up The Perfect Chocolate Cake!
When I was in college, my roommate, Dana gave me this recipe. She had gotten it from a co-worker and had fallen in love with it. It is a dense, rich chocolate cake that takes 1 full cup of cocoa to make, and 4 eggs! You can make it as a triple layer cake, but I made mine as a sheet cake.
After you take it out of the pan and cool it, you have to decide if you want chocolate or vanilla frosting. I like both, and I let Jacob decide since the cake is for him. He chose vanilla. You can find my recipe for buttercream frostinghere. But, just plain buttercream was boring. I don't know if you have ever seen what the Eagle patch looks like, but it has a lot of red.
I decided to chop up some chocolate in my chopper, as well as some red M & Ms to decorate the top. I added a few whole M & Ms as well. It came out looking and tasting delicious!
So, the take away from this is, if you have a young boy, get him into Scouting! And, there is always a reason to celebrate life's moments with chocolate cake!
