These cookies have been a favorite little bite size treat since I was a little girl. I don't make them real often, but sometimes I get a hankering for them. I felt like they would be perfect for a Valentine's Day little cookie. Apparently I don't make them often enough because Madalynn acted like she had never had them before and told me I should make them again.
The nice thing about Jam Cookies is that they don't have a lot of sugar in the dough. The sweetness comes from the jam itself. I dusted these with read sugar to make them obviously for Valentine's Day. I baked them on my baking stone because I didn't want them to brown too much, but to keep their red and white appearance. I have the Pampered Chef Rectangular Stone, but here is another, less expensive version. (As you can see, my stone is well seasoned, because it works great for cookies and for pizza!) These are a pretty little cookie to have for fancy luncheons or for little girls playing Tea Party. (Or Hot Cocoa Party), They aren't too sweet and they aren't too big, they are just right! I used my homemade strawberry jam in mine. Here is the post about how to make it.
