Blueberry Dump Cake in the Crock Pot!

       Yesterday I gave you my recipe for Blackberry Lemon Bars.  Well, not only were blackberries on sale, a couple of days later, blueberries were on sale!  Whoot! Lemons and blueberries go together just as well as blackberries and lemons do.  Around my house, we love a nice warm dump cake, and I thought I would just mix it up in the crock pot for a nice rainy day warm dessert.  Here is how I did it, then click on the button for the recipe!  Once again, the zester gets a workout, and this time I used the citrus squeezer.
Look at how great my zester works to get the zest off of 1 lemon! So much more lemon flavor than ever before!
First put the blueberries in a pot. Add the zest, the juice from on lemon and about 3 T. of cornstarch mixed with 1 c. water. Mix all together and add about 1 c. of sugar. Cook and stir until thickened.
In a greased or sprayed crock, pour in the blueberries, cover with a box of yellow cake mix then dot with a cube of butter. Sprinkle a few T. of water over the top.
Put on the lid and bake on low heat for about 2 and 1/2 hours!

You an see that this is piping hot because the Cool Whip is bubbling!
         This is so fruity, you may be tempted to eat it for breakfast.  I am not judging.  It is just very hard to stop eating it.  The lemon brightness with the blueberries is just perfect!  It is super easy to make, so I hope you give it a try!

PS- I was looking through Panna and I found this recipe for Pecan Pie with Bacon Fat Crust!  Gonna have to try it!

This sounds so yummy! I have a lot of blueberries left in my freezer from this summer and this would be a perfect way to use some up.

I've never heard of "a cube of butter"; please convert to tablespoons - or just let me know how much to use!

Sorry, I am old! HaHa. A cube of butter is 1/2 cup, or 8 T. It is the rectangular prism that you unwrap from a package of butter. Hope that helps.
