I love banana bread, but sometimes the baking time is a deterrent to making it. We have finally hit the triple digits in Phoenix a time or two, so I don't really want my oven on for that long. But, I had 3 very ripe bananas that I wanted to use up, plus I needed to take treat to a church activity. So, I came up with these Salted Caramel Banana Blondies!
There are a couple of secret ingredients that make these blondies so tasty:
Another great thing about this recipe is that it makes a big batch when you bake them in your half sheet pan. If you bake them in something smaller, add about 10 minutes to your bake time. I had plenty to take to the activity, plus leave some to enjoy at home!

I am so excited to share today's recipe with you because I was inspired by some limes that I needed to use up and I wanted to make them into a holiday treat. I decided that cranberries definitely say holiday and would go great with lime. Plus, red and green are Christmas colors, so this idea for Cranberry Lime Bar Cookies had to be good! I love it when I am right! Because cranberries have such a strong, tart flavor, I worried that the limes, which are also tart of course, would be over shadowed and that the cookies would be just TOO tart. But, when I bit into these delicious and beautiful bars, my fears went away! The sugar and the buttery crust did their job and these little bars are both completely delicious and beautifully elegant enough for a fancy holiday dinner. I used fresh cranberries in my recipe. You just put them in water and let them simmer for a few minutes to soften them up. I loved hearing the skins popping as they simmered. Then, I crushed them in the food processor! The filling mixed up so easily in that thing! These bars go together in a similar way as lemon bars, with the crust at the bottom. To ramp up the lime flavor in the bar, I put half of the lime's zest into the crust. (about a tsp.) When the Cranberry Lime Bars come out of the oven, they will be nicely set and just getting a hint of brown on them. I love the pretty red color and the bits of cranberry that you can see! Next, after they cool for a few minutes, you sprinkle powdered sugar on them like you mean it! These bars taste great warm or cool! I cut mine into 15 largish squares. I like to eat mine with a fork so as not to get the powdered sugar all over the place. Plus, they seem more fancy that way! I love how the cranberry lime filling turns into a clear, beautiful jelly! Thanks for your support! So guys, PH has finally admitted that he has a gluten problem. He and gluten are not friends. While I am proud of him for coming to this conclusion, it means that when I ran out of flour a couple weeks ago I didn't buy more. To be perfectly honest I completely forgot about it, and so I didn't buy any gluten free flour either. (You know I love Bob's Red Mill)! However, we had a family holiday party to go to and I was supposed to make a dessert to bring. My mom suggested I make Florida fudge, which I did. However, I decided I also wanted to try my hand at creating a recipe that vegan Maddy and my vegan Aunt Ada could also enjoy. I had a few jars of cashew butter from Thanksgiving when I had planned to make a different vegan dessert that I just never got to due to time constraints. I had some graham cracker crumbs, sugar... as I looked around my kitchen I thought, I bet I could come up with a vegan cookie bar that would be delicious! So, I set to work and the results are in, the cookie bars are yummy! I was happy to hear this because the party was the week after I had gall bladder removal surgery and so I still wants allowed to taste or try anything I made. It's been rough, but hey, my wedding ring fits again! Yay! These bars are gooey and rich, my mom said a small portion would go a long way. However, they were a little difficult to cut. Which is why I've suggested pressing the toppings into the filling before baking so you don't get pretzels and chocolate chips rolling around like I did.
Madalynn and Ada gave their stamp of vegan approval so, my vegan friends. Make this and take it to your holiday parties and convert everyone to your vegan ways! It made a ton! I am going to have to make more since Alicia is coming into town this week, and hey, this time I can eat them too!! Oh, and don't worry about PH. I'm going to make him a gluten free holiday delight, stay tuned!

I am giving you this brownie recipe by popular demand! I developed it out of necessity and it has become my go to recipe for brownies, which is amazing because I have a recipe that I have used for years that I thought was the best of all. Let me explain!
In my church, I lead the children up to age 11 years old in music. Each year we are responsible for a program that teaches about all of the things the children have learned in their Sunday classes throughout the year. Music is a large part of this program and we work on about 9 (or so) songs throughout the year until the fall program. In order to motivate my kids to sing their very best, I have used a "Brownie Points" system for a couple of years. As the children improve as they learn each song, I award them brownie points. Then, at the end of the program, when they have sung their very best, I bring them brownies. (They always sing their very best.) Here is a copy and paste printable of the brownie point stickers I have made to add interest to this process. I tell them in advance that we have a goal of 9 to 10 stickers per song in order to earn the brownies. I make a poster listing all of the songs and award stickers across as the year goes by.
At the end of Primary, after the program, I hand out the brownies. There are a few children who need to eat gluten free, so the first year I did this, I made both regular and gluten free brownies. The gluten free brownies were so popular and delicious, I only made those this year.
We do a lot of mustache themed activities in our singing time. It is just a gimmick to add a little fun to singing time. So, this year I cut the brownies into mustaches with a cookie cutter. The kids loved them. My husband loved eating all of the scraps!
I recently took a batch of these over to some friends, who incidentally must eat gluten free, here is what they told me about these brownies:

So, the moral of the story is, don't let the words "gluten free" scare you! These are some of the best brownies you will ever eat!
