You may be wondering why I call this Poor Man's Tamale Pie. Well, I had it in my head to try making a tamale pie in the Crock Pot, but I realized I didn't have olives or peppers, and I didn't want to go to the store, so I just came up with a delicious tamale pie sauce with what I had on hand! If I say so myself, it came out really, really good! My husband even ate some for breakfast yesterday because he liked it so much! It is not too spicy and the cornbread topping is less like a bread and more like polenta. Here is the recipe, click the button:

If you have olives and bell peppers, you can add those to the sauce as well. I am fine without olives. The cream corn was a happy accident, I thought it was whole kernel until I opened it. It worked great.

Speaking of great cooking, I have talked to you before about Panna and I have shown you some of their recipes, here and here for example. Yesterday I gave you my recipe for Blackberry Lemon Bars. Well, not only were blackberries on sale, a couple of days later, blueberries were on sale! Whoot! Lemons and blueberries go together just as well as blackberries and lemons do. Around my house, we love a nice warm dump cake, and I thought I would just mix it up in the crock pot for a nice rainy day warm dessert. Here is how I did it, then click on the button for the recipe! Once again, the zester gets a workout, and this time I used the citrus squeezer. This is so fruity, you may be tempted to eat it for breakfast. I am not judging. It is just very hard to stop eating it. The lemon brightness with the blueberries is just perfect! It is super easy to make, so I hope you give it a try! With the New Year underway, many of us are trying to eat healthier and to stay on a budget by preparing delicious food at home rather than eating out. Here is a delicious Chicken Cacciatore recipe that will help you do just that. It is hearty and delicious. I was having people over for dinner, so we were going to feed around 7 of us on Saturday night, so I decided to adapt the normal recipe for Chicken Cacciatore a little and make it crock pot friendly so everything could be cooking and ready while I cleaned the house! Click on the pictures in the gallery to see what I did. At this point, I removed the chicken to a dish and I put the sauce in a separate dish. I also prepared some fettuccine noodles to serve it all over. Then, I added a salad and some bread and we were set! Here is my version of the recipe: I served it up and we all enjoyed the dish and I realized that I hadn't taken a picture of the finished plate! But, I hope you can tell from all of the photos above that it was delicious. I made plenty, so we had leftovers the next day. It was so good. I was so happy with this recipe. When you are feeding a family of 8, casseroles become a mainstay on your weekly menu. My children got so that they did not appreciate casseroles as much as I did, but there were a few that they loved and even requested at times. This Chicken Enchilada Casserole is probably the hands-down winner of the most requested casserole award in our house. I would usually make it in the oven, but when it is too hot to turn on the oven for a casserole, then the crock pot is the answer! This casserole only has to be in the crock pot on high for about an hour, so you don't even have to plan ahead that far, except to defrost the chicken. I made mine in my regular crock pot. But, look at this casserole style crock pot! That would be so great for baking and serving casseroles on the dinner table, no more reaching down deep into the crock. Here is the recipe.
Chicken Enchilada Casserole in the Crock Pot
3 boneless, skinless chicken breasts, cut into bite-sized chunks. 2 T. Taco seasoning Brown in the chicken chunks in 2 T. of vegetable oil, season with the Taco seasoning, and cook until no pink is left in the chicken. 1 can cream of mushroom soup 1 can cream of chicken soup 1 c. sour cream 1/2 bunch of chopped cilantro 1 T. cumin 1 c. water or chicken broth 2 c. shredded cheddar cheese 1/2 or a 15 oz bag of Doritos or Fritos, slightly crushed (I use Nacho Cheese Doritos usually.) Mix the soups, sour cream, cilantro, cumin and water all together in the bottom of the crock pot. (Be sure you sprayed it with cooking spray!) After they are well combined, mix in the cheese. Add the chicken next, pan juices and all. Blend in the chips then smooth the mixture evenly in the bottom of the crock pot. Top with a little more cheese, put on the lid and bake on high for about an hour or so, until everything is bubbly.
You can also make this recipe in the oven during the winter. If you want to make it a larger recipe, just add more soup and another chicken breast. The cooking time will be about the same as this one. You will love it and so will your kids! Make a lot because everyone will want seconds. I like to serve it with extra chips.
