This Saturday is National Chocolate Chip Day AND National Sliders Day! This recipe seems to fit the bill for both of those things! Hope you enjoy it! When you have grandchildren around like my husband I do this summer, you'll discover that it is important to have Popsicles and other cool treats on hand for the middle of a hot day stuck at home. Those treats always seem to cheer everyone right up! One day, I happened to find some chocolate cookie ice cream sandwiches on sale at the grocery store and they quickly became a favorite around here. My grandkids and I decided to try to make a batch of our own! They came out really good and delicious and making them together added to our fun! We made our basic cookie recipe, but left out the butter and substituted all shortening because we didn't want the cookies to spread too thin. When they are made with shortening, they tend to stay a little thicker and hold their shape better. We were also careful to use a cookie scoop filled just right so that our cookies would be uniform for the sandwiches. My granddaughter became quite adept at it. The kids couldn't decide if they wanted chocolate, vanilla or strawberry ice cream filling, so we bought Neapolitan and made everyone happy! There are so many flavors to choose from! I just kept it simple this time. Personally, I would have chosen mint chocolate chip! After the cookies were baked, we matched them up with each other for the sandwiches. Next, I tore off the cardboard from the ice cream and sliced it into layers. My grandson used a cookie cutter that was the same diameter as the cookies themselves to cut out circles of ice cream. My granddaughter scooped them up with a little brownie server and placed them into the cookie sandwich. I wrapped them up with plastic wrap and put them into the freezer. We had quite the assembly line going! We put the scraps of ice cream in a bowl and refroze them! I have a special surprise using them coming on a post in the near future! The cookie sandwiches froze up nicely! As you can see, I wasn't too careful about the depth that I sliced the ice cream, so some of the sandwiches are thicker that others. But, no one has complained yet! Another nice thing about making these treats in advance, they are easy to pass out with no mess! I hope you try this special summer treat! Did you realize that this is national peanut month? When I think of peanuts, I think of peanut butter and when I think of peanut butter, I think of our family's favorite fudge recipe, Florida Fudge!
I shared the recipe for Florida Fudge with you a couple of year ago on this post. It is a popular Christmas treat around here.
The traditional way to serve Florida Fudge is to scoop it out onto waxed paper.
But, with Spring on the way, I decided to Easter it up a bit!
First, I used a dome mold and made little rounded fudge shapes and decorated them simply with buttercream andsprinkles. Next, I simply spread the fudge in a pan and layered on the springtime sprinkles! I think both ways are super cute and would look great in any Easter Basket!
*No matter how many times I try to make that recipe say "3 Extra Large Tablespoons Peanut Butter", it changes to Extra Large Peanut butter. So, I hope you realize it means 3 heaping, really large spoonsful of peanut butter!

Since 80% of the United States is struggling with freezing weather, warming up with a Hot Cocoa Bomb sounds like a great idea! Then, while you are at it, liven things up a bit by doing the Tim Tam Slam!
Have you ever had or heard of Tim Tams? They are a chocolate biscuit sandwiched with chocolate cream and covered with chocolate. They are a product of Australia and they are named after a winning Kentucky Derby Horse from 1958! Not only are Tim Tams known for their unique texture and flavor, they are also known for the Tim Tam Slam, which the cookie company, Arnott's, developed and promoted themselves since 2002. My SIL, Adrian, introduced our family to this phenom a couple of years ago and it is so much fun, not to mention delicious! Target used to be the place that we could get Tim Tams, but I don't know if it is because of the pandemic or what, but they don't have them now and neither does Walmart. But, I did find big family sized packages at Cost Plus World Market! Or, you can order them on Amazon. I hope you can get hold of them, because we would love to challenge you to try the Tim Tam Slam and tell us what you think!

It is amazing how fast the biscuit gets soft when the cocoa hits it! It goes from being crunchy to a fudgy, deliciousness. You need to hurry and slam it into your mouth before it falls apart! You are going to love it. The funny thing is this only seems to work with Tim Tams. There is just something about them that lends them to The Slam! I've tried it with a variety of other cookies without success. Let us know if you give the Tim Tam Slam a try, (especially if you do it with a Hot Cocoa Bomb.) Did your family have fun with it?
