Hello everyone! I am back with a PUMPKIN recipe because it is September and I am SOOOO EXCITED for summer to be over and for all the fall festivities to begin!!!
I keep seeing people post memes on the social medias about being sad about summer being over. Listen, we live in a desert. It is boiling lava hot in the summer. It is not enjoyable at all. I mean, we have a swimming pool and I am so thankful for it, and it is how I survive. However, there is no happiness in summer. Only heat and death. Fall though? Fall comes and the temperatures become bearable. I imagine it is what many of you experience in the summer. Temps that are not 100 plus degrees. It's a dream life. It's made even dreamier by the fact that people embrace my love of pumpkin. So, from here on out, I'm going to have a lot of yummy pumpkin recipes for you. I wanted to start off with this delicious savory dish. Often times, when people think of pumpkin they think of things like pumpkin pie, pumpkin bread, or pumpkin rolls. Believe me, I am 100% on board with those. However, the savory meals tend to be forgotten, and savory meals with some pumpkin thrown in are elevated meals. Like this delicious creamy pumpkin pasta recipe. This pumpkin pasta sauce is so creamy and delicious, you will devour this pumpkin pasta dish! The best part? It is so easy to put together! In our house, it was a meal our whole family could enjoy! We usedthis gluten free pasta since PH can't have gluten. This has been our favorite gluten free pasta version so far. Creamy Pumpkin Pasta
Ingredients: 1 Box Ronzoni Gluten Free Penne Pasta 1 15 oz can pumpkin 1 can chicken broth 1/2 block cream cheese 1/2 red onion, chopped 3 tomatoes chopped 2 tsp salt 1 tsp pepper 1 TBSP garlic 1/2 cup Parmesan Directions: Cook pasta according to package directions Combine pumpkin, broth and cream cheese and stir until the cheese is melted. Add in remaining ingredients and stir until you have a smooth ,creamy sauce Combine all ingredients in one bowl and mix to get sauce on all of the pasta. Garnish with basil.

It's that time of year! School is back in and before you know it, Halloween will be here. Time to get out the Fall decor and start eating things made with pumpkin pie spice! I was thinking about a little strip of wall that I have between my family room and kitchen when I went to look around Michael's the other day. Michael's has a ton of really cute fall items for the home right now and I saw a bunch of really cute plaques for about $5.00 that I thought would be perfect for my wall. Then, I found these little unfinished wooden plaques for 99 cents! I knew that I could paint a whole slew of word signs at a much lower price! (.99!) I already owned the paint and brushes, etc. I am going to paint 2 more, which I will share with you later, but today I will share the basics for this cute little "Hello Pumpkin" plaque. Supplies:
As I said, I already owned all of these supplies except for the .99 plaques. If you have to buy it all just for this project, if will be cheaper to just buy the pre-made plaques! Instructions:
3. Use blackboard paint to cover the flat surface on top. 4. Use a stiff bristle brush or toothbrush to flick paint around the edge of the plaque. 5. Practice how you want to do your lettering on a piece of paper before you attempt it on your plaque. You could use white graphite or a stylus to give yourself a pattern to follow. 6. Use the white chalk marker to write on the plaque. 7. I decided it needed a little something extra, so I made a pumpkin in the corner. Use plenty of coats to fill it in and hide the black. Then use your brush strokes to add to the texture of the pumpkin. 8. Finally use green to add leaves, vines and stem. I am converted to Command Strip picture hangers for all of my picture hanging needs! No more pictures getting crooked with the slam of a door or big truck driving by! And, Command Strips make it so much easier to hang them straight the first time!

Guys, ever since my husband admitted he had a problem, we have been living the gluten free life. I have ventured into gluten free land before, but now it is a whole new world. Everything I bake must be gluten free or he can't eat it. Generally he says I just shouldn't bake things because he doesn't need to be eating it anyway. Sometimes though, you just need a treat. I cannot eat all the cookies all by myself!
Okay... I totally could actually... but why should he miss out?? Well, I was on a quest to make a pumpkin chocolate chip cookie that wasn't quite so cakey, but more like a regular chocolate chip cookie. Now, it ALSO had to be gluten free! I am here to tell you guys... I did it! I found the best gluten free pumpkin chocolate chip cookies! These gluten free pumpkin chocolate chip cookies are soo good! Don't judge that it is almost March. Pumpkin can, and should, be consumed year round. Friendly reminder, pumpkin is good for you. So anyway, my favorite gluten free flour mix definitely came in handy this time around. Bob's Red Mill makes great gluten free flour blends! This one comes with the xanthan gum already mixed in. It is a 1 to 1 ratio. I like that a lot. It takes very little effort to switch out basic cookie recipes for this great gluten free substitute. Here is another great thing about this recipe: it is egg free! You are just a short step away from making it vegan. So... if you want to, go ahead and do it! You could switch out the butter for your favorite vegan butter, and use these vegan chocolate chips instead. I'm lookin' out for you my vegan and gluten free friends! So, go make these gluten free pumpkin chocolate chip cookies and try not to eat all of them at once! (Although, you totally could. I would not judge you.)

During my recent trip to visit my family in California, I attended a luncheon with my sister where we were served a variety of soups. I started with the delicious clam chowder, which is a favorite of mine. Then I tried the Pumpkin Sausage soup and I fell in love with it! Since my son does the Keto Diet, I knew that he would like it too.
I came home to Phoenix and found this recipe on I Breath, I'm Hungry. I made a couple of changes for our taste and I will post the recipe I used below. One of my favorite things is that the turnips made a really good replacement for potatoes and another favorite thing is the creaminess that the mascarpone cheese adds to the soup. This recipe makes quite a lot of soup. My husband and I had eaten it for two days, then my came over and finished it off with us. He kept going back for more! It is that good! This soup would be easy to make and put in the crockpot for later and is a warm and satisfying meal during this hustle and bustle time of year. |
