Crockpot Apricot Peach Butter

     It is so great having friends with fruit trees! When there is a bumper crop year and they are up to their ears in so much fruit that they don't want to go to waste, they think of me and I appreciate it so much!  
      I was over at Anita's house the other day and everywhere I turned, she had apricots in buckets, boxes and baskets.  I took some home and canned some.  Another friend also gave me some small peaches from her tree, so between the leftover apricots and the leftover peaches, I decided to make a batch of Apricot Peach Butter in the Crockpot.  It was so easy and the results were fantastic! 

     My measurements for this recipe aren't exact because I made it with the leftover fruit that I had, so I approximated the weight.  When I got all of the fruit into my crockpot and blended it with my immersion blender, it was just below half full.  This is the type of recipe that you can adjust according to how much fruit you have and simply add the sugar and spices to your own taste.  

•  This recipe is especially good to use with fruit that is too ripe or slightly smashed to simply can as halves in jars.  The fruit is still good and sweet, but not pretty! 
• When you can apricots, you never have to peel them, and in this batch, I was too lazy to peel the peaches.  They were small and getting soft, but my immersion blender made short work of the peach skins so that they aren't noticeable in this butter.   You could also blend all of the fruit in a food processor before adding it to your crockpot.
• I set my crockpot on low and let the mixture cook down until it was thick and the spreadable consistency that I wanted.  Be sure to vent the lid of the crock pot to allow steam to escape. You could put the lid on ajar or prop a wooden spoon in it to hold up the lid slightly.  You will be stirring it occasionally anyway.
• After my fruit had cooked down, I ended up with about 3 jars of butter.  As I said, if you have more fruit, you can make a larger batch and simply adjust the sugar and spice up or down.   
• Seal your jars using a water bath or steam canner.  For my 3 jars, I used the steam canner! 

     We celebrated Memorial Day at Anita's house.  She was giving out apricots as party favors! I am canning apricots again today and loving it!  Thank you Anita.  I love to can!
