Molten chocolate Zucchini Cake-Gluten Free, but you can't tell!

Molten Chocolate Zucchinie Cake
     Just the words Molten Lava Cake make me want one, even if I'm not hungry.  The idea of that creamy warm chocolate, flowing out of a moist chocolate cake sets my makes my mouth start to water.  
       Unfortunately, I rarely allow myself to eat one because I know that they are  not the healthiest things in the world for me.  Then, I heard about a Molten Zucchini Cake and realized that if I made a Molten Lava Cake in a healthier way, I could enjoy the chocolatey goodness way more often!  Plus, there is a bonus!  This cake is a great way to use up the zucchini from your garden! 

      Here are more great reasons why it is okay to eat this cake:
  • It has a vegetable in it.  That adds fiber and vitamins and moisture and very few calories to the cake, yet you don't even know the vegetables are in there when you eat it.
  • There is no flour in this cake! Gluten free people can eat it and no one else cares because it doesn't taste gritty or like cardboard!
  • There is no processed sugar!  You use real maple syrup or honey as the sweetener.  I used maple syrup in mine.
  • Well, except, there is Nutella in it.  I guess that adds sugar, but also hazelnuts and chocolate, so I think that is a fair trade off.   The Nutella is not the molten center part though, so tricked ya!
       Here are a few tricks to making this cake successfully the first time. (It is pretty easy anyway!)
  • Grate the zucchini on the fine side of a grater.  Then, put it between paper towels and squeeze out the liquid as much as possible.
  • Whip the egg whites until they form soft peaks, like this:

Don't over whip until they are dry.
  • Grease your custard cups generously with coconut oil and dust them with cocoa powder to aid in transferring the cake to a plate.

  •  I made my cake with a yellow crook necked summer squash.  A small one gave me about 1/2 of a cup of grated squash after squeezing out the water.  Zucchini will also work.  Also, I peeled my squash, but you don't have to.  It does make it easier to hide from little eyes if you are trying to sneak in veggies into their diet though.
