Alicia and her family are busy at her husband's family reunion in Florida visiting Disney World.  She tells me that today she is going to the Epcot Center where she will discover new dishes to make for her International series.
In the meantime, I have been working a lot on our Pie e-book that is soon to come out!  Well, as luck would have it, I had a bit of an Oreo Cookie crust leftover in the bottom of a pie tin. I thought, I should share a nice Fall flavored cheesecake with our readers!  This fluffy, easy to make and absolutely delicious No Bake Pumpkin Chocolate Cheesecake is what I decided to share!

My crust. It only was on the bottom of the pan. You can make a whole crust up the sides if you want. This was just from my leftovers. I had been experimenting, you know how I am.
At first, I wasn't sure if the chocolate and the pumpkin would go well together. So, I went to our family pumpkin expert, Lindsey.  When I asked, she looked at me incredulously and asked, "Mom! Haven't you ever had Pumpkin Chocolate Chip Cookies?"  She listed a few other things that I am not sure I have ever eaten, but she won me over and I gave it a try.  She was right!  It came out so good!  So, give it a try! It seems fancy, but it is easy and quick!

Then the fudge sauce just turns it up a notch!
You can use Hot Fudge Sauce that you purchase, but I used my homemade Best Fudge Sauce Ever. I recently edited the recipe by the way because the recipe had said "t" at one point when it should have said "T"!  Sorry for that error.
The hard part about this cheesecake is waiting for it to set enough to cut and serve it!  It is the nicest dessert as we enter fall when the weather here is still warm but just beginning to turn! I hope you enjoy it!
