Have you ever watched the Food Network Show called Chopped? It is really fun to watch and when the contestants pull out the weird ingredients that that have to cook with, we like to try to figure out what we would make with them. The joke around here is that I always figure out how to turn the ingredients into a pie! A couple of weeks ago, we found out that today, May 17th, would be World Baking Day. We decided that it would be fun to try our own version of Chopped! Since Lindsey is in the middle of a move, she wasn't going to be able to participate in the baking, so we asked her to choose the ingredients that we would be required to use. WOW! None of those things were what I expected! So, this was a real challenge! It was a lot of fun figuring out what to do with them. Surprisingly, I didn't end up making a pie! We decided to make a video to tell you a bit about the creative processes of Maddy, Alicia and myself. Since we all live apart, we filmed ourselves, then Alicia did the final creation of the video. Thanks Alicia! Alicia and Maddy still want to tweak their recipes a bit before sharing them with you. So, watch for those! Today, I'm going to share with you my recipe for a Mango Chutney and Chickpea Coffee Cake. I love the crunchy crumble topping the best that I made from the panko crumbs and toasted coconut. What would you bake with those ingredients? It would be so much fun to hear from you, especially if you give this challenge a try! I know that I tossed around a lot of ideas before I decided on this one. Which ingredient seems the most challenging to you? I thought it was going to be the chutney, but I think I had the hardest time with the chickpeas in the end. We've done a lot of baking projects over the years on the blog.
