Do you know how hard it is to make a tasty, healthy meal in a kitchen you are trying to keep picture perfect for people coming to look at your house or appraise your house? Well I do! Lucky for you, when and if that day ever comes (or any other stressful time) I have got the recipe for you!
This chicken wrap is like a grown up version of a peanut butter and honey sandwich.
This wrap is filled with everything you need in a meal. There is chicken and almond butter for protein, apple and grapes for fruit, honey for a little sweetness, and it's all wrapped up in a romaine lettuce leaf! I found something like this on Pinterest, but there was no recipe attached, so I just kind of made it up as I went.
I boiled two chicken breasts until fully cooked. Then I cut it into cubes and threw it into a bowl with some red grapes, chopped up apples, lemon juice to keep the apples from browning, some honey and almond butter, and stirred it all up.
I had never really used almond butter before. Many people swear by it's health benefits, and I am not anti almond, we drink almond milk around these parts. However, almond butter is generally more expensive than peanut butter, so we just don't buy it. However, Fry's, my favorite grocery store, now sells Kroger brand Almond Butter. It does still cost more than Peanut Butter, but that is always the way its going to be, almonds are more expensive than peanuts. I love Kroger brand products though, most the time I think they taste better than the name brand, and they're cheaper! So find your Kroger brand almond butter and get to mixing!
Once it's all mixed up you just put some in a washed romaine leaf and roll it up. Then eat up and enjoy! I had two, I have to say my favorite thing about this recipe was that I felt full, but not stuffed. Enjoy your healthy meal!
