Friends, I made a chicken dish this week to share with you. It involved marinating chicken thighs and then baking those chicken thighs the next day. The chicken was juicy and delicious. It was an Indian style dish involving masala. Then I realized that today is May 4, making tomorrow May 5. I have a few options here. Today is Star Wars Day (May the 4th be with you). So I could share with you a Star Wars Dish, but what would that even be? Something you could pick up in a cantina while Hans Solo is killing creatures over in the corner? Or, I could go with a Mexican dish in honor of tomorrow being Cinco de Mayo. Cinco de Mayo is kind of a big deal here in AZ, being so close to the border and all. Plus it seems like most people use it as an excuse to drink. Well, we don't drink alcohol, so we'd only be focusing on the food aspect of it. However, I am going to be real with you. Tomorrow PH and I are getting on a plane and flying to France. France! I love that place so much and I am getting all teary eyed thinking about going back. We're going back! So my recipes are going to be MIA for the next few weeks because I am going to be out of the country. When I get back you can be expecting some French recipes from me, because I'll just want to keep reliving our trip. PH is threatening to eat Steak Tartare while we are there, so after I nurse him back to life I'll be making much better French food options.
