After a rough week, it's good to have a good weekend. We went hiking together as a family on Saturday and it was gorgeous and a lot of fun, and good to get out and get those muscles working!
Sunday after church we decided it was high time we go meet our neighbors who moved in across the street about five months ago. I know I know. We're slow. They were friendly and invited us in for a visit which was really nice except my daughter fell and bit her lip and started bleeding. The hazards of toddlerhood. That was the only rough park of the weekend, my poor baby boo getting injured because she tried to stand on a ball.
After we got her home and cleaned up, cheered up, and asleep, I got started on dinner. This tasty dinner, which was actually pretty quick to make. I am a fan of Thai food, and chicken is pretty much my staple meat. I am always trying to find recipes that'll force my husband to eat more vegetables. So this Thai Chicken peanut sauce and veggies was the perfect solution. The veggies are all in with the meat and the sauce, there is no escaping them!
This was a pretty healthy, yet still filling meal. You could make it a little lighter by using lite coconut milk if you want. I won't stop you. I didn't do it, and PH said the peanut sauce was pretty thick, but it was flavorful!
