In the Summer Time, when people around our house are coming and going from work and various activities and the heat is really on, it is great to have a few one pot meals up my sleeve that I can direct people to when they are on their way in or out. Not only that, one pot meals require less clean up and fewer burners turned on to heat up the house. I love this recipe for all of those reasons, besides the fact that it is healthy, full of veggies, colorful and tasty! At this time of year, when people's gardens are producing lots of zucchini, tomatoes and peppers, this recipe uses up a lot of that as well. It is a winner all the way around!
To make it, you start with your vegetables. I like to start by cutting up the zucchini with my wavy slicer. I just like how fancy it makes the slices look. It is particularly nice for slicing veggies for a tray to serve at parties. Mine is from Pampered Chef, here is a similar one at a really good price.
The recipe calls for a couple of cloves of garlic. You can dice them or smash them. I like to put them through my garlic press so that the flavor goes throughout the recipe easier. Mine is also from Pampered Chef, but here is another nice one that costs less.
The vegetables and garlic all get sauteed in olive oil and you add the sausage and seasonings. Tomatoes, both fresh and canned dices go in next. Finally, you throw the rice and water right into the pot and let everything simmer for 20 min.
